A quick and easy recipe for dates stuffed with a mixture of toasted walnuts and sesame seeds flavoured with cinnamon, orange zest and rose water. For the coating, I have used coconut flakes and pumpkin seeds, but any other nuts or seeds would work just fine here. They are great as a light dessert, a snack, or just anytime you feel like a nibble.

- Toast walnuts, and sesame seeds in a dry skillet until fragrant, about 5 minutes, and then remove them from the heat and set aside to cool.
- Place walnuts, sesame, cinnamon, sugar and orange zest in a coffee grinder. Process until you have a thick paste. Turn the paste into a bowl and stir in rose water.
- Fill each date with about a teaspoon of nut mixture. Brush with melted coconut oil and coat with coconut flakes or chopped pumpkin seeds.

Angie, I was surprised to see this post. In the middle east stuffed dates with nuts, and at times they stuff it with chocolate and then roll it in chocolate powder, are served in royal families weddings! This is very popular in Gulf countries, so thanks for the royal treat :)
The dates sound outstanding! They will be perfect as a little nibble when you don't want a heavy dessert.
My mom used to make similar recipe but with dried apricots. Dates sound better, softer.

That sounds like a great idea! I see dates being sold but have no idea what to do with them. Never thought of stuffing them and then coating them again. It would be a great and healthy snack.
Angie, I just know that I will be making these soon. I absolutely adore dates. I often stuff them with almond (or almond butter) and top with coconut.
dates are generally considered healthy and are eaten mostly during winters in India....this is a great twist to the ordinary ones. love the recipe!
