This is a refreshing salad with an amazing combo of sweet, juicy cantaloupe, intriguing spicy smoky chorizo, and distinctly peppery rocket salad, dressed simply with olive oil.

- Heat a small skillet over medium heat. Add the chorizo slices and cook for 1-2 minutes or until the slices are crispy. Let cool, then break into small pieces.
- Shave off ribbons of cantaloupe, using a vegetable peeler or mandoline. Arrange arugula leaves and cantaloupe ribbons on two serving plates. Sprinkle the chorizo and crushed pink peppers over. Drizzle olive oil over salads.

What brilliant interpretation of the more common cantaloup and prosciutto! I love the addition of the tangy rocket leaves and pink peppercorns. This will be spectacular when the farmers'markets are selling sweet, summer melons! This might end up on our summer gourmet menu :) Thank you, Angie!

Angie, I just wanted to let you know I made this for a birthday dinner party last night and it was delicious! I made a vinaigrette with a little champagne vinegar and a touch of sugar and Aleppo pepper and dressed the melon and topped the arugula with the melon and then the chorizo. Our melons aren't the best yet but it was still wonderful. Thank you!
