These blueberry ice cream banana muffins with the cinnamon streusel topping are really a wonderful way to start the day.

- Line a 12-cup tray with paper liners. Preheat the oven to 190C/375F. To prepare the topping, combine the brown sugar, pastry flour, cinnamon powder and chopped almond in a bowl. Cut in butter until it resembles the coarse cornmeal. Set aside.
- To prepare the batter, sift together the flours, baking powder, baking soda, and salt in a mixing bowl. In another bowl, beat the bananas, blueberry ice cream, sugar, egg, and oil until blended. Add the liquid mixture to the dry ingredients. Mix until the dry mixture is moistened.
- Divide the batter into the 12 paper liners and top each with some streusel mixture. Bake for 20 minutes until golden. Remove from oven and place on a wire rack to cool briefly before removing from the pan.

Angie, I so love the fact that you added ice-cream to a muffin. It is soo cool. I am sure this added a whole new dimension from the flavor point of view. Yummy! I agree, they are an awesome way to kick start a day.
That topping looks amazing! As nice as it is to have a perfect muffin, sometimes it's the topping that makes it really special. And I also love the use of ice cream in the batter! Yum!

This is a great recipe because I always seem to be choosing between blueberries and bananas for cereal and yogurt toppings, and breads and muffins!!

I noticed you uses buckwheat flour in quite a number of recipes. Sometimes I find it hard to incorporate it into recipes, but yours looks perfect. Thanks for sharing it, will try it out when I get some buckwheat. :)

I had to double check the recipe when I saw ice cream! I never saw a recipe like this before. I love banana and blueberry together! And the streusel look scrumptious.

Blueberry Ice Cream huh? I've seen very little of that flavor, but I do have some caramel ice cream that I'm thinking would be good in these. They certainly sound interesting.
