Spanish Chicken

This effortless and delicious Spanish chicken is the perfect harmony of aroma, flavour and colour. A simple marinade prepared with lots of fino sherry, white wine and spices used as the sauce and basting liquid. Perfect for any day or night of the week. Marination is the key to the perfection of the taste. So the longer you can let the marinade do its magic, the tastier the chicken gets. I left mine marinate for 16 hours, but if you are in a hurry, give it at least 4 hours up to 24 hours. Plan ahead, then you won’t be disappointed. Serve the chicken with crusty bread to mop up the sauce, or with some roasted potatoes or just a salad of your choice. I made a black radish salad with it.

 
  • 2 tbsp Olive oil
  • 1 Onion, chopped
  • 2 Garlic cloves, peeled and minced
  • 1 tsp Dried oregano
  • 1 tsp Smoked paprika
  • 1 tsp Cumin powder
  • 1-2 Bay leaf
  • 300 ml Fino Sherry
  • 150 ml Dry white wine
  • 6-8 Skin on bone in chicken thighs
  • Sea salt and freshly milled black pepper
  • 150 g Green olives
  • 1-2 tbsp Parsley, chopped
  1. Combine all marinade ingredients in a large mixing bowl and whisk together. Place chicken thighs in a large resealable bag and pour the marinade over the top, making sure the chicken is fully submerged. Refrigerate chicken and marinate for at least 4 hours or up to 24 hours.
  2. Preheat your oven to 200C/400F.
  3. Tip the chicken and marinade into an ovenproof dish or roasting pan and arrange the skin-side up. Bake for 45 minutes, basting the chicken with the juices every 10 minutes or so.
  4. Scatter over the olives and bake for a further 15 minutes, again basting once or twice, until the chicken skin is browned. Garnish with chopped parsley and enjoy!

There is a world wide shortage of Sherry and it's so difficult to get here, other than the very sweet variety. I would love to try this!

Marinating makes such a huge difference and, in many case, the longer the better. (Not fish, though...) I have grilled chicken thighs on my menu plan for Wednesday and will use your marinade. Can't wait! ~ David
