BLT Breakfast Salad

A salad to kick start the day or as a light "brinner" (breakfast for dinner), this flavourful breakfast salad has all the makings of a much-loved classic BLT: crispy bacon, fresh romaine lettuce, juicy grape tomatoes, sourdough croutons and a creamy mayo-based dressing. And of course some soft boiled eggs to add protein and to keep you satiated until lunchtime! Leave out the croutons if you are on low carb way of eating.

 
  • 6-8 slice Smoked bacon
  • 1 tbsp Unsalted butter
  • 100 g Sourdough bread, torn into bite-size chunks
  • Sea salt and black pepper
  • 3 Medium eggs (at room temperature)
  • 1 Romaine heart, torn into chunky pieces
  • 120 g Grape tomatoes, halved
  • 2 tbsp Dill, roughly chopped
  • 3 tbsp Homemade olive oil based mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp White wine vinegar
  • 2 tbsp Chives, chopped
  • Sea salt and black pepper
  1. Preheat the oven to 200C/400F. Arrange the bacon in a single layer on a baking tray. Bake for 10 minutes then rotate the tray and bake for a further 7-10 minutes until the bacon is deeply golden and crisp. Transfer to a plate lined with kitchen paper and set aside.
  2. Add the butter to the bacon fat that’s left in the tray. Return briefly to the oven to melt, swirl the fats together then add the torn bread. Toss to coat and bake for 10 minutes until crisp, stirring halfway through. Season and set aside.
  3. Boil the eggs in a saucepan of boiling water for 7-10 minutes, depends on how you like it. Transfer to a bowl of ice-cold water using a slotted spoon. Leave to cool then peel and halve each one.
  4. To make a dressing, whisk together the mayonnaise, mustard and vinegar. Mix in the chopped chives, then season to taste.
  5. Arrange the lettuce on a large platter, season with black pepper and drizzle with half the dressing. Top with the tomatoes, croutons and eggs then roughly chop the bacon to scatter over. Drizzle with the remaining dressing, scatter over the chopped dills and serve.

Eggs look lovely with their golden yolks on a black plate. These days we are mostly using eggs at the streets to throw them at our government officials and municipality workers and their gangsters. It is super fun when you smash them in the head or face.

I truly don't understand. This is a simple recipe, but it has quickly become my favorite breakfast meal. How did I not think to ever do this? I am going to tell myself it's becuase I have been focused on the dirty dishes and the carpet cleaning.
