This fruity avocado salad with mango tastes simply delicious. Chilli rounds off the whole thing with a spicy note and the rice crackers provide the crunchy effect. If you want to use some homemade croutons, then cut the 2-3 slices of wholegrain bread into 1 cm cubes and dry toast them in a skillet until golden and crunchy. Remove and toss with a tablespoon of olive oil.

- Wash and spin dry the baby salad leaves. Peel the mango, avocado and cut each into 1 cm cubes.
- To make the dressing, place all the ingredients, except olive oil, in a glass or bowl and mix well with a whisk. Then drizzle in olive oil and continue stirring until well combined. Season with salt and pepper to taste.
- Toss baby salad leaves, diced mango and avocado and chopped mint to the dressing and serve the the salad garnished with the rice cracker or croutons. Or arrange separately in a large bowl and mix at the table.

Colourful plate is always the best, what are those burgundy red leaves?
They are the baby beet leaves...it's called Bulls Blood.
Mango and avocado salad seems like a gift from the gods, but given the price of both ingredients very expensive!
So pretty and tastey!
Wonderful salad anyday! Yum!
Quite lovely! Oh, I love the combination of this!
Yum, looks delicious and healthy! Take care, have a great day and a wonderful week!
This looks like a tasty winter salad. Well anytime of year but for some reason fruits like mangoes, lemons and oranges always taste better in the winter. Have a great start to the new week Angie.
Ottima! La proverò certamente! Un caro saluto!
