With this salad, you don't have to choose between nutrients-dense black lentils and sweet potatoes. Together with some fresh herbs and a poached egg, you can expect a real flavour experience. If you can't find beluga lentils, use French puy lentils. They both share the same size and texture and also hold their shape well when cooked. When poaching eggs, use the FRESH ones, ideally at room-temperature, as older eggs tend to have watery egg whites that won't closely surround the yolk when poached.

Fig leaves add a great mediterranean flavour to the feta as it bakes. If you can't get hold of any, then simply use a piece of foil to wrap the feta. The combination of briny feta, sweet ripe figs and earthy roasted pinenuts makes this late summer/early autumn salad a winner. For a more substantial meal, toss some cooked quinoa, legumes or grains with greens as the salad base.

Ideal for afternoon tea with a cuppa or as dessert, this rice pudding slice is the perfect combination of cake and pudd. You can make the rice pudding a day before and store in the fridge after cooling down. The next day follow the recipe to finish the pudding cake. Store the baked pudding in an airtight container in the fridge for up to 3 days or freeze the rest for 2 months. Defrost overnight in the fridge, then reheat in airfryer or microwave for 2-3 minutes.
To make rice pudding, you need to use those round grain rice varieties like Comolino and Originario. Arborio rice, which is normally sold as risotto rice, is also suitable for rice pudding. In principle, you can cook rice pudding from all starchy round grain rice varieties.

This vibrant barley salad is a great autumn / winter side dish or a simple lunch with great textures and seasonal flavours. Barley, either hulled or pearl, has a low GI, so it will leave you feeling fuller for longer. However, barley is not gluten-free, so feel free to use brown rice, oats or buckwheat instead to meet your dietary needs. If desired, toss the cooked barley with some dried sour cherries or cranberries to add a pop of colour and the pleasant tart sweetness.

The aubergine makes this chocolate slice wonderfully moist and, with their slightly tart flavour, goes perfectly with the dark chocolate. Once the chocolate cake has cooled, wrap it with a piece of aluminium foil and leave it to rest for another day as it tastes BEST next day. Dare to put these unusual ingredients together? It promises a new taste experience and the flavour is worth it. You will certainly be putting this healthier cake on your coffee table more often.

A fuller, maltier German exprot beer in this deceivingly easy and hearty yeasted bread gives it a wonderfully deep flavour and the walnuts provide texture and substance. Use pilsner or ale if you can't find German export beer. To give your bread an extra bit of flavour, toast the walnuts before adding to the dough.

With shallots, red onions, figs and balsamic vinegar and mustard sauce, this one pan baked chicken thighs taste flavoursome and aromatic. It's fancy enough to serve to guests yet easy enough to make for weeknight dinners. As always, I prefer using bone in skin on chicken thighs/legs, but if you have to use chicken breast, then at least use the one with skin intact. The crispy skin balances nicely with the mellow textures of the cooked figs to make this chicken meal really special and delicious.
