Fruity Carrot Soup

Keep the family warm, healthy and happy with this creamy fruity carrot soup topped with chopped parsley and pink peppercorns. Adding fresh orange juice to the soup to bring out the sweetness of carrots. I also added some white beans because they make the soup even creamier and richer when blended! Next time I will for sure add a few pinches of chilli flakes for some extra heat.

  • 2 tbsp Olive oil
  • 400 g Carrots, peeled and chopped
  • 2 Garlic cloves, sliced
  • 250 g Cooked white beans
  • 1 tsp Fresh ginger, grated
  • 1 tsp Curry powder
  • 650 ml Chicken broth
  • 100 ml Freshly squeezed orange juice
  • 100 g Crème fraîche
  • Sea salt
  • Cayenne pepper powder
  • 2 tbap Fresh parsley, choped (for topping)
  • 1/2 tsp Pink peppercorns (for topping), optional
  • Extra-virgin olive oil
  1. Heat a large saucepan over medium heat. Add in olive oil. Cook chopped carrots and sliced garlic, stirring often, for 5 minutes or until just soft.
  2. Add in white beans, grated ginger, and curry powder. Stir briefly. Pour in broth and freshly squeezed orange juice. Reduce heat to medium-low. Simmer for 20 minutes or until carrot is tender.
  3. Use a stick blender to puree until smooth. Stir in crème fraîche and season with salt and cayenne pepper.
  4. Ladle into serving bowls, then scatter with chopped parsley and pink peppercorns if using. Drizzle with a little olive oil and serve immediately.

Hummus Bowls with Spiced Ground Beef and Grape Tomatoes

A bed of extra creamy hummus topped with well spiced ground beef and a fresh grape tomato salad served with crisp crackers (or bread of your choice). It makes a simple and tasty weeknight dinner. You can easily use chicken, pork or lamb (tofu if you want to go mealess) in place of the beef or try other seasonal vegetables on top. The hummus can also be made the day before and stored in the refrigerator.

  • 1 tbsp Olive oil
  • 450 g Ground beef
  • 1 tsp Ground coriander
  • 1/2 tsp Freshly milled black pepper
  • 1/2 tsp Ground cinnamon
  • 2 tsp Sea salt, divided
  • 250 g Grape tomatoes, halved
  • 1 cup Fresh herbs, coarsely chopped (I used parsley, thyme and mint)
  • 1 tbsp Fresh lemon juice
  • 2 batch Chickpea hummus
  • Extra-virgin olive oil, lemon wedges, Aleppo-style chilli pepper flakes, and crackers for serving, optional
  1. Heat oil in a large heavy bottom skillet over high. Pat beef dry with paper towels, then press into an even layer in skillet with a spatula. Season with coriander, black pepper, cinnamon, and 1 teaspoon of salt and cook, undisturbed, until a brown crust begins to form underneath, about 6 minutes. Turn, break beef into pieces, and continue to cook, stirring, until just cooked through, about 1 minute.
  2. Meanwhile, toss tomatoes, parsley, lemon juice, and remaining 1 teaspoon salt in a medium bowl.
  3. Divide hummus among shallow bowls. Using the back of a spoon to create a shallow well in the center. Spoon spiced beef and tomato mixture over, then drizzle with oil and sprinkle with pepper flakes. Serve with lemon wedges and crackers alongside, if using.

Halloumi Wraps

If you’re looking for a quick-fix, filling, deliciously comforting recipe, look no further than these halloumi wraps. With wholegrain tortillas, homemade hummus, mixed sweet bell peppers, beetroot, arugula and seeds to garnish, this wrap is a treat for your taste buds and makes a satiating protein-rich midweek meal. Substitute tofu for halloumi if you want to go vegan, but the wrap won't be quite the same without halloumi.

  • 25 g Paprika flavoured pumpkin seeds (or regular)
  • 1 tbsp Cumin seeds
  • 2 tbsp Extra virgin olive oil
  • 1 x 250 g Halloumi, each cut into strips or cubed
  • Prosciutto, optional
  • 4 Wholegrain wraps
  • 100 g Hummus
  • 100 g Vacuum packed ready-to-eat red beetroots, sliced
  • 200 g Mixed bell peppers, cut into strips
  • 50 g Arugula
  1. Toast the pumpkin seeds (if using regular) with the cumin seeds in a large frying pan until they begin to pop and smell fragrant, then transfer to a large bowl.
  2. Cut the halloumi into 12 strips or chunks or a mix of two. Wrap halloumi strip with a slice of prosciutto if using.
  3. Heat the olive oil in a pan and fry the halloumi strips or cubes until golden brown and crisp. Spread a layer of hummus on each flatbread and top with bell peppers, beetroots, halloumi, arugula and toasted seeds to serve.

Baharat Chicken with Chickpeas and Garlic Yoghurt

A quick and easy chicken supper using the Middle Eastern spice blend, baharat and a sprinkling of sesame seeds on bone-in, skin-on chicken thighs.
Baharat is a common spice blend widely used in Middle Eastern, Turkish, and Greek cuisines. Baharat is the Arabic word for "spices". The mixture of finely ground spices is often used to season meat, seafood, rice and soups or sprinkled over finished dishes as a condiment. It's warm, earthy, smokey and aromatic. If baharat is not readily available, use equal parts of paprika, cumin, black pepper and cinnamon instead. You can also make your own.

  • 1 1/2 tbsp Baharat
  • 1/2 tsp Salt
  • 3 tbsp Olive oil
  • 4 Chicken thighs, skin-on, bone-in
  • 1 tbsp White sesame seeds
  • 1 tin x400 g Chickpeas, drained and rinsed
  • 6 Garlic cloves, peeled
  • 250 g 10% Plain Greek yoghurt
  • Mint leaves
  • Salad greens
  • Pomegranate seeds
  1. Preheat the oven to 200C/400F fan forced. Mix the baharat, salt with the olive oil in a small bowl.
  2. Put the chicken in a deep roasting tray, brush with the spice-glaze and scatter over the sesame seeds. Add the chickpeas and garlic and bake for 30–40 minutes.
  3. Remove the tray from the oven, take the garlic out and set aside. Brush the chicken with the oil that has gathered at the bottom of the tray. Return the chicken to the oven for a further 15–20 minutes.
  4. Blend together the garlic cloves and yoghurt until well combined.
  5. Serve the chicken on a bed of salad greens, chickpeas, pomegranate seeds with the garlic yoghurt drizzled over and the mint leaves scattered on top.

Chickpea Flour Hummus with Olives and Pine Nuts

A silky smooth, flavourful and healthy hummus that is so easy and fast to make. The secret is to use chickpea flour (also known as gram flour or besan) instead of whole chickpeas. Hummus made with the whole cooked chickpeas is great, but if you want ultra silky, light as air texture, and don't want to go to all the bother of peeling the skin off chickpeas, then chickpea flour is the answer. The dip will generally keep for up to 5 days in the fridge.

  • 80 g Chickpea flour
  • 550 ml Water
  • 3 Garlic cloves, finely minced
  • 100 g Tahini
  • 2 tbsp Lemon juice
  • 1/2-1 tsp Cumin powder
  • Dash of hot sauce
  • 1/2 tsp Sea salt
  • Olive oil
  • A mix of green and black olives
  • Pine nuts, toasted
  • Fresh parsley, chopped
  • Flatbread and vegetable sticks to serve
  1. In a medium saucepan, mix together the chickpea flour and water until lump free and well-combined. Bring the mixture to a boil. Cook on medium-high heat for 1-2 minutes, stirring constantly. Reduce the heat to medium-low and cook another 5-7 minutes, stirring constantly. Let cool.
  2. Transfer the chickpea paste into the pitcher of your immersion blender. Add the garlic, tahini, lemon juice, cumin and hot sauce. Blend until smooth. Season with salt. If the mixture is too thick, add a little olive oil.
  3. Scrape into a bowl and cover a thin layer of olive oil. Sprinkle some olives, pine nuts and parsley over. Serve with flatbread, crackers or vegetable sticks.

Butternut Squash and Chickpea Soup with Saffron and Pecorino

This nourishing soup is made with butternut squash, chickpea, coconut cream, Italian hard cheese, and plenty of fresh ginger and saffron. It’s robust, has a lovely silky texture and super tasty. Serve this as a starter for a dinner party or a filling supper with crusty buttered bread when you need a bit of comfort. This soup keeps well in the fridge and is easy to freeze.

  • 1 Garlic clove, chopped
  • 1 pc 3-inch Fresh ginger root, peeled and thinly sliced
  • 50 g Butter, coconut oil or olive oil
  • 0.2 g Saffron powder
  • 600 g Butternut squash, peeled, deseeded and roughly chopped
  • 500 ml Homemade broth (vegetables, chicken or beef)
  • 150 g Cooked chickpeas, drained and rinsed well under running water
  • 300 ml Coconut cream
  • Salt andfreshly cracked black pepper
  • A large pinch of nutmeg
  • 50 g Pecorino, grated
  • Pumpkin seed oil for garnish
  • Chives for garnish
  • Pepitas for garnish
  1. In a large heavy saucepan, sauté garlic and ginger in the butter over a low heat until aromatic. Add the saffron, pumpkin and half the broth, then cook over a low heat, with the lid on, until the pumpkin is almost cooked.
  2. Add the cooked chickpeas, the remaining broth, coconut cream and plenty of cracked black pepper. Bring to a boil, then reduce to a simmer, with the lid on, and cook for about 15 minutes.
  3. Use an immersion blender to process the soup until smooth. Season with salt, then add nutmeg to taste. Stir in the grated Percorino cheese and ladle into soup cups. Drizzle some pumpkin seed oil over and top with a few chives and pepitas.

Vegan, Gluten Free Spinach Chickpea Crepes

Spinach Chickpea crepes are a great vegan and gluten-free alternative to classic crepes and they’re so GOOD filled with heaps of shredded veggies and mushroom-pâté inspired by Tin and Thyme. You can serve this as an appetizer or with extra portion of salad or soup as a light lunch.

CrepesTo Serve
  • 120 g Chickpea flour
  • 60 g Potato starch
  • 60 g Spinach leaves
  • 1/2 tsp Garlic salt
  • 270 ml Water
  • Mushroom pâté (recipe here by Tin and Thyme)
  • Shredded black radish
  • Shredded Carrot
  • Shredded bell pepper
  1. Place all the ingredients in a mixing bowl. Use an immersion blender to process everything until you have a smooth batter. Cover with plastic wrap. Set aside at room temperature for 30 mins to rest.
  2. Heat a 22-cm non-stick skillet over medium flame. Brush the skillet with a bit of coconut oil. Pour about 1/3 cup of the batter into the hot skillet while quickly tilting the skillet in a circular motion to swirl batter to evenly cover the base.
  3. Cook for 1- 2 minutes on medium heat, or until the crepe is dry on the surface and crisp around the edges. Flip the crepe and cook on the other side for a further 1 minute. Transfer to a plate. Cover loosely with foil to prevent the crepe drying out. Repeat with the remaining batter to make 8 crepes.
  4. To serve, spread some mushroom pâté over the crepe, and top with shredded vegetables. Roll up firmly to enclose filling and enjoy!

Stirfried Brussels Sprouts with Beluga Lentils

Brussels sprouts flourish this time of year. Put this hearty winter veggie and beluga lentils together in this delicious and nutritious vegetarian meal tossed with a simple balsamic vinegar dressing.

  • 180 g Beluga lentils
  • 400 ml Water
  • 500 g Brussels sprouts, trimmed and washed
  • Salt
  • 50 g Sundried tomatoes, sliced
  • 1 Shallot, diced
  • 3 tbsp Ghee
  • 20 g Raisins
  • 50 ml Organic apple juice
  • 50 ml Chicken broth
  • 1 tbsp Maple syrup
  • 2 tbsp Balsamic vinegar
  • Freshly ground peppers
  • Parsley leaves
  1. Cover the lentils with water in a medium pot. Cook, covered, for 20 minutes until tender. At the meantime, bring a large pot of water to boil. Add salt to taste and brussels sprouts. Cook for 10 minutes. Drain and set aside.
  2. Slice the sundried tomatoes and finely dice the shallot. Melt the ghee in a skillet. Add in diced shallot and stir until aromatic. Add in brussels sprouts and cook for 3 minutes. Now add in sliced tomatoes and raisins and cook 3 more minutes.
  3. Pour in apple juice and chicken broth and cook 3 more minutes. Fold in lentils, season with maple syrup, balsamic vinegar, salt and pepper. Toss gently to combine. Garnish with parsley and serve.

Baked Cauliflower Falafel with Almonds and Broccoli Seed Sprouts

Falafel gets a healthy makeover! These flavourful baked falafels are better than the real deal, because they are made with cauliflower, broccoli sprouts, white beans, almonds and einkorn flour! It makes a great lunch paired with salad greens, extra roasted cauliflowers, Feta and a refreshing yoghurt dressing.

Cauliflower FalafelCumin Roasted CauliflowerSalad & Yoghurt Dressing
  • 100 g White beans, cooked
  • 150 g Cauliflower florets
  • 1 clove Garlic, peeled
  • 2 tbsp Broccoli seed sprouts
  • 1 Egg, medium
  • 30 g Almonds, ground
  • 60 g Einkorn flour
  • 1/4 tsp Baking powder
  • 1/4 tsp Chilli flakes
  • 1/2 tsp Cumin seed powder
  • 1 tsp Salt
  • 1 tsp Olive oil
  • 500 g Cauliflower, cut into 5cm florets
  • 1 tbsp Olive oil
  • 1 tsp Cumin seeds
  • Salt and black pepper
  • 200 g Plain full fat yoghurt
  • 1 clove, Garlic, minced
  • 2 tbsp Freshly squeezed lemon juice
  • 1 tsp Olive oil
  • 2 tbsp Broccoli seed sprouts
  • Salt and white pepper
  • 80 g Salad greens
  • 1 Onion, peeled and sliced
  • 2-3 Cherry radishes, cut into wedges
  • 50 g Feta, crumbled
  1. Preheat the oven to 200C/400F. Line a baking tray with baking paper. Brush the baking paper with half of the olive oil.
  2. Drain the white beans and place them in a processor together with cauliflower florets, garlic, broccoli seed sprouts and egg. Process all the ingredients until smooth. Add in ground almonds, einkorn flour, baking powder, chilli flakes, cumin powder, and salt. Process again until well combined.
  3. Using 2 tablespoons to form 10 falafels and place them on the prepared baking tray. Brush the falafels with the remaining olive oil. Bake in the middle of hot oven for 30 minutes until lightly golden brown.
  4. In a large bowl, toss the cauliflower, oil, and cumin to coat. Season to taste with salt and freshly ground black pepper and toss again to coat well. Arrange cauliflower in a single layer on a large, heavy baking tray and roast in 200C/400F hot oven for 30 mins, or until tender and golden brown.
  5. Mix yoghurt, minced garlic, lemon juice, olive oil, and broccoli seed sprouts together. Season with salt and white pepper powder.
  6. Place salad greens, sliced onions and cherry radishes on a serving platter. Crumble the feta over and top with cauliflower falafels. Serve with cumin cauliflowers and yoghurt dressing.

Beluga Lentil Salad with Padrón Peppers and Sweet Potatoes

This feel-good salad with two of my favorite things, lentils and sweet potatoes, partnered with heirloom peppers and sundried tomatoes to create a dish that's filling, healthy and delicious. By providing both high fiber and protein, the lentils make this salad filling enough to be a meal by itself or a side dish with your favourite grilled chicken or salmon.

SaladDressing
  • 250 g Beluga lentils
  • 700 ml Water
  • 600 g Sweet potatoes, peeled and cut into thick slices
  • 250 g Padrón peppers
  • 2 tbsp Olive oil
  • 3 Sundried tomatoes, sliced
  • 3 Cherry radishes, sliced
  • 1 tbsp Chives, chopped
  • Lollo Bianco
  • 1 tbsp Sherry vinegar
  • 1 tbsp Fresh lemon juice
  • 5 tbsp Olive oil
  • 1 clove Garlic, minced
  • 1 tsp Fresh thyme leaves
  • Sea salt and freshly ground black pepper
  1. Rinse beluga lentils under running water. Drain and place them in a medium saucepan. Add the water and bring it to a simmer over medium-high heat. Continue to cook them over low heat, stirring occasionally and adding liquid if necessary, until the lentils are tender but not mushy, 25-30 minutes.
  2. While lentils cook, preheat oven to 200C/400F. Toss the sweet potato slices with 1 tbsp of olive oil and season with salt and pepper. Arrange them in a single layer on a parchment-lined baking tray. Bake for 30 minutes until golden brown.
  3. Toss padrón peppers with 1 tablespoon of olive oil until completely combined. Roast at 200C/400F for 10-15 minutes until the pepper skins start to blister and brown. Sprinkle them with a little sea salt.
  4. To prepare the salad dressing, combine all of the ingredients and whisk until thoroughly blended.
  5. Drain lentils and place them in a large bowl. Add in sliced dried tomatoes, cherry radishes and chopped chives. Pour in half of the dressing and toss until combined.
  6. Arrange lollo bianco in two salad bowls or one large platter, then top with roasted sweet potatoes, beluga lentils and padrón peppers atop. Serve with the rest of dressing.

Broccoli Mung Bean Falafel

There is nothing better than homemade falafel and these baked broccoli falafels with mung beans are super easy, healthy, and flavourful. Enjoy them for a meat free lunch or dinner with avocado sauce or garlicky-yoghurt dressing.

FalafelRoasted Sweet PotatoAvocado Sauce
  • 100 g Mung beans, cooked
  • 150 g Broccoli florets
  • 1 Large garlic clove
  • 2 tbsp Parsley, chopped
  • 1 Egg
  • 30 g Pumpkin seeds, ground
  • 60 g Whole einkorn flour
  • 1/4 tsp Baking powder
  • 1/2 tsp Coriander powder
  • 1/2 tsp Smoked paprika powder
  • 1 tsp Salt
  • 1 tsp Olive oil
  • 700 g Sweet potatoes, cut into bite sized pieces
  • 1 large clove Garlic, sliced
  • 1/2 tsp Coriander powder
  • 1/2 tsp Cumin powder
  • 1 1/2 tbsp Olive oil
  • Sea salt and freshly ground black pepper, to taste
  • 150 g Greek Yoghurt
  • 1 Ripe avocado
  • 2 Pickled green chillies
  • 1 tbsp Freshly squeezed lime juice
  • 1 handful Flat parsley
  • Sea salt & pepper to taste
  1. Preheat the oven to 200C/400F. Line a baking tray with baking paper. Brush the baking paper with 1/2 teaspoon of olive oil.
  2. Drain the mung beans and place them in a processor together with broccoli florets, garlic, parsley and egg. Process all the ingredients until smooth. Add in ground almonds, einkorn flour, baking powder, chilli flakes, cumin powder, and salt. Process again until well combined.
  3. Using 2 tablespoons to form 10 falafels and place them on the prepared baking tray. Brush the falafels with the remaining olive oil. Bake in the middle of hot oven for 30 minutes until lightly golden brown.
  4. Place sweet potato cubes, garlic, cumin, coriander and oil in a large roasting pan. Toss to combine. Season and roast at 200C/400F for 30 minutes until tender.
  5. Place yoghurt, avocado, pickled chillies, lime juice, and parsley for the sauce into a blender and whiz until smooth. Season with salt and pepper. Serve falafels with roasted sweet potato and avocado sauce.

Heart-shaped Purple Cabbage Salad with Chickpea Tofu

Add a burst of colour to your plate with this crunchy, healthful, and delicious Heart-shaped Purple Cabbage Salad with Chickpea Tofu.
Heart-shaped cabbage, also called conehead cabbage, or Filderkraut, is an ancient cabbage variety native to Filder, Germany. It offers a mild, sweet flavour and tender texture. It can be used to make coleslaw, added to fish tacos and lend texture to mixed green salads.

Balsamic DressingSalad
  • 100 ml Olive oil
  • 3 tbsp Balsamic vinegar
  • 1 clove Garlic, minced
  • Salt and pepper to taste
  • 1/2 head Heart-shaped purple cabbage, thinly sliced
  • 1 Red onion, peeled and sliced
  • 3 Scallions, chopped
  • 2 Pickled chilli peppers, thinly sliced
  • A handful of salad greens
  • Turmeric chickpea tofu, diced
  • 50 g Honey roasted almonds, chopped
  1. Combine together olive oil, balsamic vinegar and minced garlic. Taste and season with salt and pepper.
  2. Place thinly sliced heart-shaped cabbage, red onion, scallions and sliced pickled chilli peppers in a salad bowl. Add in balsamic dressing and toss.
  3. Arrange some salad greens on a serving platter and top with cabbage well tossed cabbage salad. Garnish with the turmeric chickpea tofu and honey roasted almonds.
