With the combination of crunchy walnuts, fresh pomegranate, sugarfree apple sauce and delicate spices, these muffins are a real treat for the senses. They are not only easy to make, but also versatile: whether as a sweet breakfast, afternoon snack or dessert, they are perfect for any occasion. These tender and fluffy pomegranate and walnut muffins are not only a really delicious autumn recipe, but also fit perfectly into the cold winter days.
Oatmeal contains mainly complex carbohydrates, which are digested more slowly, keep you feeling full for longer and keep your blood sugar more stable than simple carbohydrates.

- 220 g Oat flakes, ground into flour
- 50 g Walnuts, roughly chopped
- 30 g Chia seeds (or crushed flaxseeds)
- 1 tsp Cinnamon powder
- ½ tsp Pure vanilla powder
- 1½ tsp Baking powder
- ½ tsp Baking soda
- 1 pinch Sea salt
- 2 Large eggs
- 250 g Buttermilk
- 200 g Sugarfree apple sauce
- 50 g Honey
- 120 g Pomegranate seeds
- 20 Walnut halves for topping

- Preheat the oven to 180C/350F. Grease a 12-cup muffin tin with a little butter. Process the oats in a food processor or blender until they resemble coarse flour. Roughly chop the walnuts with a knife.
- Mix the oat flour with chopped walnuts, chia seeds, cinnamon powder, vanilla, baking powder, baking soda and salt in a large bowl.
- Place the eggs in another bowl and whisk until frothy. Then add the buttermilk, apple sauce and honey and mix everything together. Add the egg mixture into the oat mixture and stir to combine. Fold in the pomegranate seeds.
- Divide the batter among 10-12 muffin cups and place 2 walnut halves on the top of each muffin. Bake the muffins for about 30-35 minutes. Insert a wooden skewer into the centre of the muffins and pull it out. If no dough sticks to it, the muffins are done. Remove the muffins and leave them to cool in the tin before removing them from the mould.

Danke fur die glufrei optionen :) It is interesting that we do not really have apfelsauce here in my country even though we produce a lot of apfels, guess it is just not out tradition, but I can find it in DM drogeriemarkts.
I am not a big fan of pomegranates ; otherwise they look great.
