This refreshing and crunchy carpaccio variation with kohlrabi and apples scores points thanks to its fresh ingredients and a nutty, earthy Styrian pumpkin seed oil vinaigrette. Toasted pepitas and parsley make great toppings. Easy and delicious!
Since pumpkin seed oil is rather thick, you can use 1-2 tablespoons water or broth to dilute the dressing. You can also make this into a simple salad by cutting kohlrabi and apple into sticks, which then tossed with the dressing.
| Vinaigrette |
- 2 tbsp Pepitas, toasted
- 1 Medium-sized kohlrabi
- 1 Crispy apple (green or red)
- 1 Lime, juiced
- 1-2 tbsp Parsley, chopped

- 2 tbsp White wine vinegar
- 2 tbsp Olive oil
- 2 tbsp Styrian pumpkin seed oil
- 2 tbsp Water
- 1-2 tsp Dijon wholegrain mustard
- 1-2 tsp Maple syrup
- Sea salt
- Freshly milled black pepper

- Roast pepitas in a pan over medium heat without oil for 3-5 minutes and set aside. You can also spread the pepitas on the parchment-lined baking sheet in a single layer, and bake at 180C/350F for 15 minutes.
- Mix all ingredients for the dressing in a small bowl or shake them with the lid on in a mason jar.
- Peel the kohlrabi and slice it into thin slices using a sharp knife or mandoline. Wash the apple, remove the stalk and core with an apple corer and slice it finely too. Drizzle the lime juice over the apple slices so they won’t turn brown. (Alternatively, you can cut both sliced kohlrabi and apple into sticks and toss with the dressing.)
- To serve, arrange the sliced kohlrabi and apple slices alternately in a circle on two plates. Drizzle with the dressing and garnish with the roasted pepitas and chopped parsley.

What does Styrian mean? Where is Styria?
Styrian pumpkin is a variety of the pumpkin cultivated to produce pumpkin seed oil. The seeds are usually shell free.
...I've never had kohlrabi, perhaps now is the time.
