Walnut Fig Quickbread

This foolproof hearty quickbread is studded with rich, chewy figs and crunchy, earthy walnuts and lightly sweetened with erythritol, best served warm with some whipped ricotta, nut butter or honey. You can sub in olive oil, coconut oil, or butter for the walnut oil. I used white spelt flour, but a combination of whole and white flour would work lovely too. Perfect for breakfast or an afternoon treat.

 
  • 250 g Dried figs, quartered
  • 60 g Walnut oil
  • 1 1/2 tsp Baking soda
  • 250 ml Boiling water
  • 100 g Erythritol or regular sugar
  • 2 Large eggs
  • 1/2 tsp Pure vanilla powder
  • 80 g Walnuts, coarsely chopped
  • 200 g White spelt flour
  • 1/2 tsp Baking powder
  1. Place the figs, walnut oil, and baking soda in a large bowl. Pour the boiling water over and stir, let stand for about 15 minutes until it has cooled to room temperature.
  2. Preheat the oven to 180C/350F. Line or grease a 9×5 loaf pan.
  3. Whisk the erythritol, eggs, and vanilla powder into the fig mixture. Stir in the walnuts. Set aside.
  4. In another bowl whisk the spelt lour and baking powder to combine. Whisk the flour mixture into the fig and walnut mixture just until combined.
  5. Spread the batter into the prepared loaf pan and bake 45-50 minutes until golden brown, or until a toothpick inserted into the center of the loaf comes out clean.
  6. Place the loaf pan on a wire rack and let cool for about 10 minutes. Then turn the bread our onto the rack and allow to cool completely.

I love a good quick bread and this one sounds very tasty. I made a chocolate zucchini bread the other day, and at the same time I made a spice zucchini bread with chocolate chips. Not anything new like this would be though.
