These gluten-free vegan no-bake bars, adapted from Rapunzel, are filled with homemade popped amaranth, almonds, cocoa powder, a combination of cocoa and coconut butter, and sweetened with maple syrup and dried cranberries. They are great on the go, super healthy getting your daily fiber and protein.
No Bake Amaranth Bars (Vegan, Gluten-free)

- Line a 9-inch rectangular pan with parchment paper. Place the coconut butter and cocoa butter in a saucepan. Melt over the low heat.
- Mix the melted coconut and cocoa butter together with the rest of ingredients. Spread and press the mixture into the bottom of the prepared pan.
- Cover and refrigerate for at least 1 hour. Slice into bars. Store the rest in the airtighter container in the fridge.

I have not baked or cooked with amaranth before and I am intrigued by these bars - the texture on them is AH-MAZING - the flavors with the cocoa butter and coconut butter make me wanna sink my teeth into these!

Angie, you may not realize that these are the exact type of treats that is also great for people with 'diabetes'! My cousin was visiting me (also from Florida)...she just found out abt. her type 2 diabetes...after getting very ill, and I had to rush her to the ER at our local hospital! She is on meds now but must change her diet. These bars are amazing, and super delicious!

I've never actually tried amaranth, but these look utterly delicious, and perfect for a snack on the run. I obviously need to add some of those ingredients to my shopping list.
Being a gardener I've heard of amaranth but never knew it was used in food! Another thing I will have to add to my list to look for :) Even though I don't know what it tastes like these bars look delicious with the almonds and cranberries.

Anything no bake makes me happy. I have a bag of amaranth I purchased last summer and had yet to do something with. I've never used amaranth before. Now I can put it to good use!

@Yelena StrokinI popped my own amaranth. Use a heavy bottom saucepan and heat until very HOT. Add just enough amaranth to barely cover the bottom of the pot with a single layer. Shake that saucepan constantly. Once the popping slows down, immediately empty them into the bowl. They get burned very quickly.
I've never heard of Amaranth before. Sounds so healthy and delicious, wish I can have a piece right now :D

I'm using puffed grains more and more. They're so versatile and useful in recipes like this -- a great bulking agent for bars that tastes great too. These look wonderful!
