Flourless, Sugarfree Peanut Butter Chocolate Cookies

These flourless peanut butter cookies are a dream if you're going gluten-free and sugar-free, especially with the perfect pairing of chocolates. I have used Martha's recipe and replaced caster sugar with pure stevia extract powder and they turned out fantastic.

  • 250 g Smooth peanut butter
  • 1 Large egg, lightly beaten
  • 0,6 g Pure stevia extract (or 180 grams of sugar)
  • 1/2 tsp Baking soda
  • 1/3 tsp Salt
  • 150 g Dark chocolate chips
  • 50 g White chocolate chips, optional
  • 150 g Roasted salted peanuts
  1. Preheat oven to 160C/320F, fan-forced. Line two baking sheets with parchment papers. Set aside.
  2. Cream peanut butter, pure stevia, egg, baking soda and salt i na large mixing bowl until well combined. Stir in chopped chocolates and peanuts. With damp hands, roll level tablespoon of dough into a ball. Place on the prepared baking sheets. Flatten slightly.
  3. Bake for 12-14 minutes until golden and puffed, swapping baking sheets halfway through cooking.

@Cass @foodmyfriend It's not bitter at all...the one I use for the baking is about 300 times sweeter than sugar, so you just need very little (less than one gram), if it tastes bitter, it might because you have used more than it requires.

I think stevia powder is still not available in our country, but cookies look promising. As I'm trying to cut sugar a bit - I need to find a reason to cook them. Still - they look very tasty and crunchy.

Great for diets and non. I love these lovely cookies and what I love most is that they are sugar free. We can all train our palate to have less sugar. I don't like those industrial biscuits you get in supermarkets. They are loaded with sugar, really too much.

Angie, you could actually promote and sell these amazing 'gluten-free, sugar-free' yummy peanut butter cookies at our 'green market' and would sell them all out as soon as you put them out! I have not seen such gorgeous, and perfectly shaped cookies at our market, at all. Every Saturday people are selling their baked goods, and nothing compares to your homemade cookies! xo

What a lovely rise from a small touch of baking soda -- I have never been a fan of the taste of stevia however in a setting like this, I have no doubt the other delightful flavours would come shining through! :) And what a great option for diabetics and those of us on lower sugar diets.
