Simple and delicious, this healthy salad features earthy, tangy, and crisp Belgian endives and sour-sweet and full-flavoured mandarins. A small handful of chopped arugula and homemade bread croutons are the perfect accompaniment for adding some extra flavour and crunch to this delightful winter salad, then toss everything with a white wine vinaigrette.

Oh Angie...I love salads with a burst of citrus...especially in the winter! Beautiful photos! : )
This salad would be perfect in summer, as well, with its fresh flavours and colours. Thinking of making something like this tonight =)
I can already feel the spring from this colorful salad!
I suddenly have a craving for salad. Looks delicious
Your dishes are always so beautifully presented Angie.
:-) Mandy
I love the gorgeous colour of this salad. Mandarin Oranges really do add a special touch to dishes and it really jazzed up the endives here.
A fabulous salad and combination!

Rosa

It is surprising that endive is not more popular - perhaps because it isn't cheap. But I know exactly what your salad tasted like - excellent.
What a lovely winter salad Angie. I like everything about it, including homemade croutons. Homemade croutons are so far superior to the bought ones there is just no comparison.

I rarely put citrus in my salads but when I do, I really enjoy it ... This version looks so tasty :-)
Ooh lovely! I love citrus in salads, and the arugula would give this salad just a nice peppery bite, too! Love it!
I love using oranges in salads - delicious, fresh and appropriate for winter. Combined with the crunch of the endive - it's a grand lunch or a sparkling side.

I just bought a large bag of cara cara oranges and I love making salads with them. I know that they would work great in this delicious salad! Love the vinaigrette.
Looking very good and fresh!Especially in the middle of winter, reminds me spring :)
I bet mandarins nicely mellow the endive's flavor. Would be nice as appetizer as well in individual leaves like that.

Wow!! Delicious orange salad!!
Hi Angie! I think we're on the same wave length this week;-) Love your fresh Winter salad with tangerines-have to try macadamia oil in my salad!
Such a refreshing salad - Kudos!
I love salad with fruit in it. This looks fantastic!
What a wonderful winter salad. Thank you for sharing with me. This post, along with my cup of hot chocolate, is making for a very lovely Thursday morning. Have a great weekend!
This salad screams summer, crisp and refreshing. Very lovely. madarins are my favorite citrus so I am won over.
This is such a great-looking fresh and light salad. And, a great use for citrus right now!
This is so refreshing Angie. And Mandarins are in season now. A great way to use them!
I had my very first taste of endive salad while I was in San Fran last 2011. Although I still haven't quite acquainted myself with the taste, I know that I won't check it off my list. I love that mandarins are added to give that extra tang and natural sweetness. I found endives to be slightly bitter which bitter & me just don't jive. I am getting there am sure as I grew older, I found myself exploring other flavours. Great recipe!!! ♥ Jo
Very inviting and fresh juicy salad for winter.... Wonderful!
I always get excited when I see mandarins at the grocery store. Right now they're really cheap too, which makes me especially happy. This would be a great way to use them!
Awesome flavor combo with the mandarin oranges, looks really refreshing!
That sounds like the perfect salad!! You come up with the best Angie!!
it's a great usher-in CNY recipe with the bright mandarin oranges :)
I always find endive really hard to use in dishes, and it really is quite rare where i am at now, but this sound like a great dish for chinese new year with the abundance of mandarins now!
A fantastic & well-flavoured seasonal salad! Yum!
The macadamia oil in the vinaigrette sounds so delicious- I love the look of this beautifully colourful, yet wintry, salad. Your photos are gorgeous, Angie! :)
Angie, that looks wonderful.
It's so hard to get the right balance when using fruit in savoury dishes and vegetables in sweet.
But a recipe like this neutralises the sweetness so it compliments everything beautifully.
Such a great use of flavours, happy new year!
Such I beautiful dish. This is definitely going on my "to make" list.
This sounds so refreshing, great colours and textures and perfect for January.
I love coming by here and looking at all the pretty photos!!
This is a gorgeous salad. I always love the colors of your dishes!

I just got some mandarin oranges from my In-Law's yard. Guess I'll be making this salad tonight. :) Thanks for the inspiration. Have a great weekend.
Good looking salad. I would sprinkle on a bit of blue cheese and chopped macadamia nuts too.
This salad looks too pretty to eat! I love the combination of the sweet orange with the arugula.

Beautiful plate of salad! I like the usage of mandarin oranges!
Wow, looks really refreshing! Although the endives can be a little bitter, but with the sweet mandarin oranges, it will be prefect! What a great way to introduce seasonal fruits to our daily meals. :))
