Marinated Fig and Parmesan Salad

Fresh sweet figs marinated in mild tangy balsamic marinade contrast with powerful pungent shaved Parmesan in this elegant salad adapted from Tom Kime via BBC Good Food.

  • 8 Ripe figs, stalks trimmed
  • 4 tbsp Balsamic vinegar
  • 2 tbsp Olive oil, plus extra for drizzling
  • Finely grated zest and juice of 1 lemon
  • 1 tbsp Fresh thyme, chopped
  • Parmesan shaves
  • 50 g Arugula leaves
  1. Cut each fig lengthways into four wedges. Make a marinade by whisking the balsamic vinegar, olive oil and lemon juice with salt and pepper to taste.
  2. Stand the fig wedges up in the middle of a large shallow serving dish, keeping them close together. Scatter the lemon zest and thyme on top, then drizzle with the marinade. Leave to stand at room temperature for 30 minutes.
  3. To serve, lightly torn arugula leaves round the figs, scatter with Parmesan shaves, and drizzle with a little olive oil.

Good choice to send to Nancy's. I'm never had a fig marinated, it sounds like the perfect way to complement the sweetness of the fig. Love that rocket salad too. I was eyeing your black rice too. Hope you have a great weekend Miss Angie.

Love figs, but they never survive long enough to make it into a salad, I eat them like candy :)

Salad looks like something that would come to the table in fancy restaurants. Very elegant looking. Need to try the balsamic with figs.

I don't think to buy figs. I'm not sure why I don't, they are well loved in my household. Wonderful flavors in this easy salad. I'll definitely be putting this on the dinner table. It would be terrific as a light lunch too!

I love fresh figs and miss the tree we had when we lived in California. We can get them at the farmer's markets, but somehow, they don't taste the same as picking them yourself. This salad looks fantastic and I think it's going to be on my menu for Thanksgiving! The sweetness of the figs in comparison to the bite of the arugula will be perfect, XOXO

There is something so special about fresh figs and pairing it with Parmesan ad rocket is wonderful, sweet, salty and peppery. Sadly figs are no longer in season here in Toronto and I'm not paying $3-4 each so this will have to wait for the next season.

Gorgeous salad! It's amazing how such a seemingly delicate fruit can hold it's own against strong flavors. I've never tried figs with Parmesan, but that's going to change. I love them with balsamic! Lovely, lovely salad!
