Red Lentil and Green Pea Salad

Labels: { , } | © 2011 | | © 2011 | | © 2011 |

Fast-cooking red lentils teamed up with frozen green peas to make this hearty fiber-rich salad. It makes for a healthy and satisfying lunch with its bright colours and chewy yet tender texture. It turned out that I didn’t touch any chicken breast leftover, so just leave it out if you haven’t got any leftover.

  • 200 g Dried red lentils
  • 80 g Frozen green peas
  • 1 Small yellow onion, finely chopped
  • 400 ml Vegetable stock
  • 1 Baby carrot, thinly sliced
  • 2 Cherry radishes, cut into wedges
  • 2 Strawberries, cut into wedges
  • A handful of salad leaves
  • Pan-seared thyme chicken breast leftover, optional
  • 5 tbsp Lemon juice
  • 3 tsp Honey
  • 5 tbsp Olive oil
  • Salt and pepper
  1. Spread the red lentils out on a work surface and pick out any pebbles, debris, or damaged lentils. Rinse lentils until the water runs clear. Finely chop the onion.
  2. Place vegetable stock in a medium pot and bring to a boil. Add in rinsed lentils and onions. Cook for 8-10 minutes. Stir in frozen green peas 5 minutes before lentils are tender. Drain well, refresh under cold water and drain again.
  3. Combine all the ingredients for the dressing in a medium bowl. Mix well and season with salt and pepper. Add the lentils mixture, sliced carrot, radish, strawberry wedges to the bowl of dressing and toss to mix.
  4. Arrange the salad leaves on a serving plate. Spoon the lentil salad in the middle, top with sliced chicken breast if used and drizzle a bit of balsamic cream over. | © 2011 | | © 2011 |

That sure looks healthy and quite filling. In fact, I'm surprised seeing red lentils in a salad, because I've mostly cooked the yellow/green/red lentils into the Indian 'dal' - so I'm finding it interesting to try it in the form of a salad. Thanks for sharing!

easyfoodsmith 15/4/12 07:19

Angie, your sense of proportion, color, and arrangement never ceases to amaze. Perhaps you should consider the visual arts as a second creative pursuit! But truly, a very impressive dish as usual.

Ilke 26/4/12 01:51

Very good idea for summer Angie. I have used them in soups, but my lentils get mushy so quickly. They never stay so individual in 10 min. Maybe I should try some other red lentil brand.

Aunt B 26/4/12 03:04

I'm always looking for good legume recipes. I'll enjoy trying this one. Thanks for sharing it.

Unknown 1/5/12 16:11

Wow this looks gorgeous and so wonderfully colorful! My fiance is a huge lentil fan, so I will make this for him very soon.

Chaya 4/5/12 02:39

Angie, you must be reading my mind. I have been wanting to use a bag of red lentils, I have and have not found a recipe, I wanted to make. This sounds like something, we will like and I have printed up the recipe. Time allowing, I hope to make this tomorrow.

Anonymous 13/6/17 22:50

Not sure why the cooking time for the lentils is 8-10 min. My bag of lentils says 25min cook time.

Angie's Recipes 14/6/17 10:15

@Anonymous Some lentils require longer cooking time, but not RED variety, or you will get some mushy lentils, which are perfect for dip or soup.
