Tomato Fig Salsa

The combination of dried figs, tomatoes, red onions, and honey vinaigrette gives this salsa a very pleasant slightly sweet tang that pairs perfectly with roasted meat or seafood.

Honey Vinaigrette
  • 180 g Ripe tomatoes, deseeded and finely diced
  • 50 g Cucumber, diced
  • 1 Small red onion, finely diced
  • 50 g Dried fig, finely diced
  • 1-2 tbsp Flat parsley
  • 2 tbsp White wine vinegar
  • 4 tbsp Olive oil
  • 2/3 tsp Honey
  • Salt and black pepper to taste
  1. To make the dressing, mix all the ingredients together in a small bowl.
  2. To make the salsa, place diced tomatoes, cucumbers, red onion, fig and parsley in a large bowl. Pour in the dressing and gently mix until combined, then taste and adjust seasonings. Store the salsa in the fridge until ready for use.

Wow this looks so delicious and refreshing! Never seen salsa like this before, it sounds fantastic! You always come up with the best ideas :D.

I saw your comment that my cajun chicken potato photo was not coming up. I haven't been blogging for very long so I have no idea why that happened. Is this the first time my photo doesn't show? It happens with my mom quite frequently (she uses a Mac). I always downsize my photos so I'm not sure why it doesn't show up. Might you know why? You seem to know blogging very well and have a lot of experience with it.

i love the sweet addition of figs and honey to this tomato salsa. It soulds so delicious... I probably wouldn't even use it as a topping... I'd just eat it straight from the bowl!

Angie-I was hoping that your recipe was not with fresh figs, because there's no way we could get fresh figs here, this time of year. Dry figs are in abundance. I've neve heard of this type of salsa, it sounds and looks so delicious, and a rich combination. So, beautiful!

Fantastic change up for a salsa. I've seen all kinds of fruits added to salsa, but not figs. I can so picture this salsa with grilled chicken breasts. Delish!
