These crispy buttery oatmeal cookies are so delicious and dangerously addictive. Enjoy them with some green tea or serve with ice cream!
- 100 g Rolled oats©angiesrecipes
- 75 g Dried flaked coconut
- 120 g All-purpose flour
- 100 g Caster sugar (more if you have a sweet tooth)
- 1/3 tsp Salt
- 100 g Butter
- 25 g Inverted sugar syrup (or corn syrup)
- 1 tsp Baking soda
- 2 tbsp Boiling water
- Heat the oven to 150C/300F and prepare two baking trays covered with parchment. In a large bowl, stir together the oats, coconut, flour, sugar and salt. Meanwhile melt the butter and syrup together in a small pot over low heat.
- Stir the baking soda into the boiling water, then stir this into the butter and syrup mixture. And pour all of it over the flour mixture. Mix well, then shape the mixture into 32 balls and place onto the prepared baking sheets. Press down to flatten the cookie balls with your palm.
- Bake for 12-15 minutes, switching the pan around if you need to for even baking, until the cookies are golden brown. Leave them on the baking trays for 5 minutes before removing them with a spatula to cool on a rack.

Angie...I'm all over these treats...especially since you add the coconut in the recipe. Now, the corn syrup is a concern...I'll have to adjust that part for me personally.

The boiling water is used to melt the baking soda, so that the mixture will distribute evenly in the dough.

i baked this cookies today. trouble is the stated ingredients wouldn't bind together as i got a very loose batter. i tried to add extra 2 tbsp butter and milk but still didn't work.
i don't have corn syrup so i substitute with honey.
anyway i still baked as it is and use a tbsp to shape it up. taste good but this resulted in chewy inside and crispy outside.
did i do anything wrong here?! pls help

Lisa, the oats and coconut you used might be different from mine, namely, they absorb more or less liquid...so you might consider adjusting the quantity of coconut and rolled oats or add slightly more honey and sugar to the mixture until you can gather all the ingredients. Leave the cookies in the oven for 10 more minutes after turn off the oven, the cookies will be crispier. And replace the honey with sugar, as honey tends to make baked goods moister.

Made these today -absolutely delicious! Used honey instead of sugar syrup and it worked well. The centre was slightly chewy but this was fine for me.
