Papaya--"Fruit of the Angels", is a nutritional tropical fruit that is packed with vitamins. Not only does the fruit aid in digestion, it is also full of vitamins A, C and E, which are three powerful antioxidants that help reduce cholesterol and prevents heart disease. Some papaya extracts are even used to treat sports injuries and muscle strains. Papaya is a great ingredient to use for wrinkle prevention.
Papayas, when ripe, are most commonly eaten fresh or in salads. They're also great in smoothies. Unripe papaya is never eaten raw because of its latex content, but can be used to make the curries or stews.

- Season the chicken lightly with salt and pepper. Heat the oil in the skillet until hot. Add in chicken and cook until tender and nicely golden brown. Remove and slice. Peel the papaya, and discard the seeds, then cut into slices.
- Make the dressing by combining all the ingredients in a blender until creamy and smooth.
Assemble the salad by arranging a bed of rucola on the salad plate. Arrange the chicken and papaya slices on top. Garnish with the sliced strawberry halves if used and serve with the prepared dressing.

wow,this is magic!
so tempting.... and the colours are so vibrant...makes me hungry
Beautiful salad. I love papaya but can't get nice ones here. I once bought a papaya which never gets ripe. It was still green and hard and yet started to rot!
Angie, you are very creative comes with the ingredients selection for your dishes. I love the addition of Dijon mustard & Dried oregano. With yoghurt it makes it very refreshing too. Overall looks very appetising. Simply loves the combination. Will try this out.
Angie, I never eat dishes cook with papaya and this dish looks so delicious and I love the presentation!
Great combination and a beautiful looking dish!
Such a droolworthy salad, looks beautiful..
You are really a great cook and baker. I have been drooling over all your delicious posts.
Angie, this is a great healthy looking dish!
Beautiful presentation
Papaya always reminds me of my mum ;), she always forced me to eat this fruit when I was young (well, whenever I visit here and she has some papayas, she would still do so too...;)). I am not very into papaya, but I wouldn't refuse the chicken and salad :)!
This is most suitable for me - super goodness and lovely combination!
I don't think I've ever had a really GOOD papaya dish...but this one is screaming EAT ME.
This is a really great looking dish!
I love the combination of these flavors Papaya is just simply good.
This is awesome! I love papayas in cooking and pickles. It is especially good in our local favourite "fruits rojak", its a mixture of fruits salad with a spicy prawn paste sauce and peanuts. Yours look absolutely delicious. Beautiful presentation!
This looks seriously delicious. Papaya is a nice and different kind of fruit, not the sort of thing we see every day.
This looks great, and I am eating a banana wanting this instead!
What a beautiful salad-the ingredients are so vibrant and healthy looking! YUM!

Ohhhhhh that looks wonderful. I love the dressing recipe.
So pretty! I hardly see papaya here, I only eat them when I go back to Malaysia.
That is a pretty platter. love the dressing.
This is such a healthy salad! I just saw a recipe with chicken and mango so I love the idea of the papaya as well.
Wow...what lovely colors!
Looks yummy,healthy & appetizing!
I've only had salad with unripe papaya before, but this sounds very interesting and I'm sure delicious.
I had no idea what papaya meant, that's beautiful! This dish is gorgeous. Looks absolutely delicious!
Angie - so summery and light. And that vinaigrette really looks good - I think I could just slurp it and skip the salad and chicken!
This is gorgeous! So beautiful too!

Looks absolutely delicious AND beautiful with nice colors. Love your creations!
Such a fresh and tasty salad Angie! I love the sound of the dressing! Makes it extra special.
This looks fantastic! Interesting info about papaya, it's a fruit I don't usually think to cook with. Maybe now I should. The combination between the papaya and chicken is definitely interesting!
Again, beautiful and healthy salad. I can eat this everything :)
What a great salad recipe for summer!!
yum what a great salad and your picture is straight out of a food magazine
I love adding fruit to salads! This looks delicious :)
Angie, this salad dish is very beautifully presented. Love Papayas too.
You make really good salad! This looks very colorful and refreshing. Talking about papayas, it is one of those fruits that I miss in the US. The papayas we get back in Asia is definitely better (ripe and sweet, and cheap!).
very nice combo, great
So lovely! Heart the colour combination ;)
I don't do great salads unfortunately, no matter how i try. Sad huh?
That's a lovely salad. Great presentation!
Beautiful presentation of a fantastic salad. Love the combination of chicken and papaya!
That's a beautiful salad, Loved everything about it, the strawberries, the parmesan dressing. Yummmm.
Great picture.
Yum! I love papaya... the perfume-like flavor is probably great with chicken.
This is fantastic, although I've still been dreaming about the chicken parm with the avacado! I love the vinaigrette, I will be trying this one!
Have a great day!

Hi Angie, these looks delicious and you are very creative. I love all the combination of flavors you have here, especially your vinaigrette.
Did you say papaya has ingredients for wrinkle prevention? I make sure I will not forget papaya on my grocery list from now on. lol
I love the combination of sweet and savoury - boy do I miss Pawpaws (Papayas) as we call them in Nigeria. They are delicious on their own with a drizzle of fresh lime juice and we often have them as an accompaniment to rice
Beautiful salad, I love the combo of chicken & papaya and your dressing is excellent!
Angie...how really interesting would this be for me to try. I say this because, papaya is one of my favourite tropical fruits which I jealously guard on its own with a splash of lime...a true delight. Putting it together with a protein would be putting me to the test ;o)
Gorgeous photo!
Ciao for now,
Claudia
What a beautiful salad. I love the composition.
As always, beautiful. I just used papaya in a fruit salad and enjoyed its mild flavor.
Oh wow Angie, the colours, flavours so-so amazing. What a delightful lunch/brnch meal this would make.
Angie! This is beautiful food! I almost wouldn't want to run my fork through it and mess up your pretty design (smile). Almost. I would though...
what a great dish for summer! the colours are amazing :)
So very pretty! I didn't know this fact about the unripe papaya. Interesting!
This is such a beautiful photo and I love that dish tastewise. Yummy!
You know you've reminded me that I need to use papaya more - I like it, but more of my family around here could pass, maybe I need to serve it up as you have it here. Sounds delicious.
Angie - how do you get your meats/poultry/seafood so evenly and beautifully caramelized? I didn't know those things about papaya...definitely going to try to include it in my diet more often. Beautiful meal of a salad and your Herb Parmesan Vinaigrette looks and sounds marketable!
Oh my goodness this is divine! I love all the flavors in it. I really wish that they sold papayas out here because I would be making this for dinner tonight.
*drooooool!!!
I love papaya!! The herb vinaigrette sounds delectable too!
What a beautiful salad...it almost looks too good to eat... almost :)
Great job! The best papaya and chicken salad I could find!
