Simple, sweet, smoky, and deliciously juicy---the pineapple caramelizes beautifully on the grill and served with a fiery herby mixture. It makes a great snack or side with grilled meat. You can grill the wedges with skin on and cut the wedges by sliding a pairing knife in between the skin and flesh of pineapple.
Blackened Pineapple

- 1 Pineapple, peeled (or not), crown left on and quartered
- 25 g Flat parsley (cilantro or mint), finely chopped
- 2 Garlic cloves, peeled and finely grated
- 1 tsp Hot sauce of your choice
- 1 Organic lime, zested and juiced
- ½ tsp Freshly milled black pepper
- Sea salt, to taste
- Chilli threads, to garnish (optional)

- Cut the pineapple into quarters with the tops still left on. Heat a barbecue or a griddle pan on the stove to a high heat. Grill them for 5-8 minutes on each cut side until you have nice char marks.
- Meanwhile, combine parsley, garlic, hot sauce and lime zest in a bowl. Season with black pepper and salt.
- Once the pineapple comes off the grill, brush with the lime juice and scatter over the parsley mixture and garnish with chilli threads. Enjoy!

Looks nice und gold! Not something I would eat as I do not do savoury dishes with fruit, but it does look pretty. Dove just released new body wash with pineapple scent actually LOL
