This tender, moist miso banana cake with walnuts (pecans are great too) is so easy and fun with an Asian twist. The miso works surprisingly well, giving the classic banana cake a deeper, robust umami flavour that really elevates the cake. The mascarpone cream and caramel walnuts are completely optional, but I thought it's a cake, so a little icing won't hurt.

- To make miso caramel walnuts, bring the sugar and water to a boil in a skillet without stirring. Reduce the heat and simmer until a light brown caramel forms. Remove the skillet from the heat, pour in the cream and simmer over a low heat, stirring until the caramel has dissolved. Add the walnut halves and miso paste, mix and leave to cool.
- Preheat the oven to 180C/350F. Line the bottom of a 22-24cm springform pan with parchment paper and grease the sides. Set aside.
- To make the banana cake batter, cream together the butter, 120 grams of erythritol or sugar and 1 1/2 teaspoons of miso paste in a mixing bowl until light and fluffy. Beat in eggs, one at a time and continue mixing until the mixture is lighter in colour.
- Mash the bananas with a fork and beat into the mixture. Whisk together the flour, baking powder and baking soda and sift into the mixture. Fold until just combined, then fold in chopped walnuts. Pour the batter into the prepared pan.
- Bake for 65 minutes in the lower half of the oven until golden brown. Insert a toothpick or a paring knife into the middle of the cake if comes out clean, then it's done. Remove, cool slightly, release the cake from the pan and leave to cool on a wire rack.
- To make the mascarpone cream, place the cream, mascarpone, remaining 20 grams of erythritol and 1/2 teaspoon of miso paste in the mixing bowl and beat until creamy. Spread the mascarpone mixture over the cake, and top with miso caramel walnuts.

I’ve never thought about pairing banana cake with miso, it makes sense though because the saltiness of the miso would be very tasty in the banana cake. I will have to try it next time I make banana cake.
