Pumpkin Kofta with Avocado Sauce

A meatless and gluten-free take on Turkish koftas / meatballs with finely grated pumpkin and lots of warming spices. The creamy avocado sauce is the perfect balance to the aromatic, crunchy kofta. A great recipe that both vegetarians and carnivores would enjoy. I have shaped kofta into sausage form, but you can shape them into balls or patties.

 
KoftaAvocado Sauce
  • 500 g Pumpkin flesh, finely grated
  • 1 Red onion, peeled and finely chopped
  • 100 g Dried apricots, finely chopped
  • 15 g Flat-leaf parsley, finely chopped
  • 1 tbsp Sambal oelek
  • 1 tsp Cumin powder
  • 1 tbsp Coriander powder
  • 1/2 tsp Cinnamon powder
  • 50 g Almond meal
  • 50 g Potato starch (or cornstarch)
  • Sea salt and freshly milled black pepper
  • 5-6 tbsp Ghee for frying
  • 1 Ripe avocado, peeled, pitted, and roughly chopped
  • 20 g Fresh herbs (I used a mixture of parsley, spring onions and cilantro), chopped
  • 2 tbsp Lemon juice
  • 3 tbsp Full-fat Greek yoghurt
  • 1 Garlic clove
  • 1/3 tsp Sea salt
  • 1/4 tsp Pepper
  1. Finely grate the pumpkin flesh with a box grater or in a food processor. Peel and finely chop the onion, the dried apricots and the parsley.
  2. Place all the chopped ingredients in a bowl with the sambal oelek, cumin, coriander, cinnamon, almond meal and potato starch. Season well with salt and pepper and mix well, preferably with your hands. Cover the mixture and leave to stand in the fridge for 30 minutes.
  3. Meanwhie prepare the sauce. Place all the ingredients for the sauce in the bowl of a food processor and puree until smooth.
  4. Divide the mixture into 14-16 portions and shape into about 8 cm long rolls.
  5. Heat the ghee in a non-stick frying pan. Once the ghee is melted and hot. Shallow fry the koftas in batches until golden brown. Serve hot or lukewarm with the prepared avocado sauce.

Looks hearty and beautifully golden. I would eat a whole plate if you leave out the cinammon und apricosen from it LOL Happy Neue Jahre tomorrow hope you are cooking something nice for tonight, I already made my roullade and will live on that for two days LOL It turned out magnificent and uber lecker.
