An incredibly easy spring salad, which is quick to prepare, frersh and versatile. Toss with your favourite dressing and enjoy the very best of the season.

Carrot, Fennel and Strawberry Salad

- inspired by Patty's Food
  • 1/2 Fennel, thinly shredded
  • 1 Carrot, shredded
  • 1/2 Red onion, cut into thin half moon slices
  • 150 g Strawberries, cut into smaller pieces
  • Mint leave, shredded
  • 2 tbsp Raspberry vinegar
  • 1 tbsp Argan oil
  • Sea salt and freshly ground black pepper
  1. Clean and dry the vegetables and strawberries. Thinly slice the fennel and carrot. Cut the red onion into thin half moon slices. Cut the large strawberries into 2-3 chunks. Place the cut vegetables on a large serving plate. Add in strawberries and shredded mint leaves.
  2. Whisk raspberry vinegar and argan oil in a small bowl. Season to taste. Drizzle the dressing over the salad.

OMG-Angie, I'm blown away...well, I must say this is one of my most favorite salad...love love, fennel, and oh, my! carrots, and strawberries...the photos, the presentation, the recipe! Whewww! exhausted with just gazing at all these, my eyes are vibrating from the gorgeous colors.

Very creative and healthy blend here. In fact if it were on the menu at a restaurant I would surely order it-yum! Also, I envy you getting such tiny strawberries because they are more sweet than the larger ones. The ones around here are getting to be as big as plums and not much flavor.

This recipe sounds similar to one that I've made many, many times, but mine has over 19 ingredients so it makes it rather laborious. I recall seeing the argan oil when we were in Morocco but sadly I only bought the cosmetic version (very good for dry skin). I will have to try this salad as I adore fennel and combined with the strawberry it sounds divine!

Stunning salade...a "must" this Noël on our table..What would you think of using pomegranite arils or fresh lingonberries...groseilles for the red "pop" of colour?

Not sure about this particular quote from Alton Brown...a tad trop "sexist" in my opinion...although I admire his culinary acumen!..

I LIKE that you always give us something to think about via your finishing quotes as well as something to create in the kitchen...Nourishing the body and nourishing the soul!..Good on you!
