Cantaloupe Ribbons and Chorizo Salad

This is a refreshing salad with an amazing combo of sweet, juicy cantaloupe, intriguing spicy smoky chorizo, and distinctly peppery rocket salad, dressed simply with olive oil.

Cantaloupe Ribbons and Chorizo Salad

inspired by My Recipes
  • 1/2 Ripe cantaloupe, seeded and rind cut off
  • 50 g Chorizo slices
  • 1 handful Arugula leaves
  • 2 tbsp Olive oil
  • Pink peppers, crushed
  1. Heat a small skillet over medium heat. Add the chorizo slices and cook for 1-2 minutes or until the slices are crispy. Let cool, then break into small pieces.
  2. Shave off ribbons of cantaloupe, using a vegetable peeler or mandoline. Arrange arugula leaves and cantaloupe ribbons on two serving plates. Sprinkle the chorizo and crushed pink peppers over. Drizzle olive oil over salads.

At first look ( haven't read the post title yet :P ) , I thought that's one gorgeous looking (homemade)pasta dish hahaha So that's one gorgeous and refreshing cantaloupe salad then ;D Haven't tried that combination before but with chorizo , I'm sold ! ;D

I have been eyeing the cantaloupes and you have beat me to them. This recipe does make great use of this terrific fruit. Love the sweet and salt combo. I am sure the chorizo adds some wonderful flavor to this. Well done!

What brilliant interpretation of the more common cantaloup and prosciutto! I love the addition of the tangy rocket leaves and pink peppercorns. This will be spectacular when the farmers'markets are selling sweet, summer melons! This might end up on our summer gourmet menu :) Thank you, Angie!

I've always loved cantaloupes with prosciutto so I'm imagining this would be just as delicious. And instead of a starter, it's become a main with the pasta ... great for a warm weather lunch!

Angie, I just wanted to let you know I made this for a birthday dinner party last night and it was delicious! I made a vinaigrette with a little champagne vinegar and a touch of sugar and Aleppo pepper and dressed the melon and topped the arugula with the melon and then the chorizo. Our melons aren't the best yet but it was still wonderful. Thank you!
