The aubergine makes this chocolate slice wonderfully moist and, with their slightly tart flavour, goes perfectly with the dark chocolate. Once the chocolate cake has cooled, wrap it with a piece of aluminium foil and leave it to rest for another day as it tastes BEST next day. Dare to put these unusual ingredients together? It promises a new taste experience and the flavour is worth it. You will certainly be putting this healthier cake on your coffee table more often.

A fuller, maltier German exprot beer in this deceivingly easy and hearty yeasted bread gives it a wonderfully deep flavour and the walnuts provide texture and substance. Use pilsner or ale if you can't find German export beer. To give your bread an extra bit of flavour, toast the walnuts before adding to the dough.

With shallots, red onions, figs and balsamic vinegar and mustard sauce, this one pan baked chicken thighs taste flavoursome and aromatic. It's fancy enough to serve to guests yet easy enough to make for weeknight dinners. As always, I prefer using bone in skin on chicken thighs/legs, but if you have to use chicken breast, then at least use the one with skin intact. The crispy skin balances nicely with the mellow textures of the cooked figs to make this chicken meal really special and delicious.

British flapjacks, aka cereal bars or oat bars, are made from oats, golden syrup, butter, and sugar. They are quick, easy to make and budget friendly. The variations on the traditional recipe are endless and this one is based on the recipe I found on BBC Good Food. I replaced the sugar with erythritol and used pomegranate syrup instead of golden syrup. You can use any seasonal fruit you have to make these flapjacks, such as cherries and apricots and experiment with different nuts or seeds. They are great for breakfast on the go, lunch boxes, picnics or afternoon tea.
