A delicious and moist quick bread that is refined sugar free and fantastic for breakfast, afternoon tea or as a perfect lunch box filler. This banana bread recipe is a great way to use up leftover cranberry sauce this holiday season! I used the homemade cranberry sauce that has whole cranberries. Feel free to use the canned one.

- 115 g Unsalted butter, softened
- 150 g Erythritol or sugar
- 2 Large eggs, at room temperature
- 1 tsp Pure vanilla powder
- 1 tsp Pumpkin pie spice mix
- 300 g Pumpkin puree
- 250 g Plain flour
- 1 tsp Baking soda
- A pinch Sea salt
- 120 g Chunky cranberry sauce

- Preheat the oven to 180C/350F. Grease or line a 24x12x9 cm loaf pan with baking paper.
- In a large mixing bowl, cream together butter and erythritol or sugar using a hand mixer or your stand mixer. Add eggs, one at a time, and then beat in vanilla powder, spice mix and pumpkin puree. Mix to combine.
- In a medium mixing bowl, mix together flour, baking soda and salt. Sift the flour mixture to the egg mixture and stir to incorporate.
- Pour half of the batter into the prepared loaf pan, add half of the cranberry sauce, then top with the remaining the batter and cranberry sauce.
- Bake the bread in the middle of hot oven for 50-60 minutes or until a skewer inserted in centre comes out clean. Set aside in the pan for 10 minutes before transferring to a wire rack to cool. Serve warm or at room temperature.
