Whether as a snack between meals, with an afternoon coffee or as an office treat: these apricot oat slices taste great and are a delight! They are easy to transport and can also be made in advance as they stay fresh in the fridge for several days. Conveniently, you don't need to use the oven, just chill them. Oat flakes, dried apricots, coconut flakes and almond meal are not only filling but also nutritious. A silky coating of Lindt white chocolate provides the fun gourmet factor. The subtly hot and fruity chilli thread are the perfect addition to elevate chocolate taste, adding a delightful kick to each bite.
- 150 g Dried apricots, finely chopped
- 100 ml Orange or apple juice
- 80 g Rolled oats
- 80 g Desiccated coconut flakes
- 80 g Almonds meal
- 2 tbsp Maple syrup
- 1 tsp Finely chopped rosemary
- 1 tsp Pure vanilla powder
- 1 pinch of salt
- 300 g Lindt white chocolate, chopped
- Chilli threads, to garnished

- Finely chop the dried apricots and place them in a bowl. Pour the orange juice or apple juice over them and leave the apricots to soak for about 30 minutes. Drain.
- Place the chopped apricots, rolled oats, coconut flakes, almond meal, maple syrup, rosemary, vanilla powder and a pinch of salt in a bowl. Mix everything well until you have a mouldable, slightly sticky mixture.
- Line a 20cm baking pan with baking paper. Press the apricot mixture evenly into the pan and smooth the surface. Place the tin in the fridge for 15 minutes so that the mixture sets.
- Chop the white chocolate into small pieces and melt it over a hot water bath until it is melted and smooth.
- Pour the melted white chocolate over the chilled apricoto bottom and spread evenly. Sprinkle some chilli threads over. Return the pan to the fridge until the chocolate is set.
- When the chocolate is firm, remove from the pan and cut it into even slices with a knife.

This is perfect for me as I do not eat sugar, gluten nor flour. I like that you soaked apricosen in apfel und orangen juice since apricosen usually taste like car tires in raw cakes when minced hahahaha.... I will put honey instead of maple syrup as we do not have that here and will leave out the chocolate. We have been boycotting on a national level all our biggest supermarket chains for a week now because of the insanely high prices, we are hoping we will drop their revenue by 40%. Gotta fight against the mobsters. Lidl is two times more expensive here than in Germany even though we have 500 euro monthly salaries.
