Burrata Arugula Salad with Raspberries and Truffle

A festive and refreshing arugla salad loaded with raspberries, pomegranate arils, creamy burrata cheese, shaved black truffle, and drizzled with a truffle balsamic glaze and argan oil!
Burrata is a special form of mozzarella that is characterised by its creaminess. Alternatively, you can also use mozarrella di bufalo or just regular mozzarella. As the name suggests, the mozarrella di bufalo is made from buffalo milk instead of cow's milk. It also tastes creamy, slightly salty and tangy.

 
  • 100 g Arugula
  • 150 g Raspberries
  • 2 Burrata
  • 1-2 Black truffle, shaved
  • 1/2 Pomegranate
  • 1 tbsp Argan oil (or walnut oil)
  • 2 tbsp Truffle balsamic glaze
  1. Wash the rocket and spin dry. Wash and drain the raspberries. Divide the rocket and raspberries on two serving plates. Shave the truffle over and place the burrata aside or in the center.
  2. Remove the seeds from half a pomegranate and spread over the salad. Now drizzle the truffle balsamic glaze and argan oil over the salad.

Jesus, she finds raspberries in December. I do ever so envy you LOL I cannot even find normal tomatoes here right now or spinach. Hope you have a nice Silvester tomorrow, I will wake up at 6.30 to bake me a corn and oats flour roullade with Gouda and smoked mayo in the filling.
