Fresh Pepper Salsa

This is a tomato-less salsa made with crunchy, juicy bell peppers and tangy, sweet pomegranate. You can serve this salsa with crackers, burgers or roasted chicken.

  • 1 Red pepper, seeded and finely diced
  • 1 Green pepper, seeded and finely diced
  • 1 Yellow pepper, seeded and finely diced
  • 1 Small onion, peeled and finely diced
  • 1 cup Pomegranate seeds
  • 2 tbsp Chopped parsley
  • 1 clove Garlic, minced
  • 1 tsp Chilli flakes
  • 1 tbsp Olive oil
  • 2-3 tbsp Fresh lime juice
  • Salt and pepper to taste
  1. Stir together all ingredients. Let stand 30 minutes, stirring occasionally. Season to taste with additional salt and pepper.
  2. Salsa will keep in an airtight container in the refrigerator for up to 3 days.

Salsa is one of those dishes you can eat year round swapping out whatever ingredients are in season. It can make a heavier meal feel light. This looks fantastic and ideal for the holidays with the pomegranate seeds.
