Those German dinner rolls (Brötchen) are super easy and quick to prepare and they taste the best when served warm. They are very versatile and can be enjoyed for breakfast, lunch, and dinner. They go great with cheese, sausage as well as jam and butter.
Quark is a fresh cheese of European origin. It usually has much lower fat content (the one I used for the recipe is 0.2%) than cream cheeses and has no salt added. It is soft, un-aged, quite similar to fromage frais, but it is not the same thing as cream cheese or cottage cheese. Quark is an ideal cheese for a low-carb lifestyle and healthy living.

Whole Spelt Quark Rolls

adapted from Eat Smarter
  • 30 g Coconut oil or butter
  • 250 g Low fat German Quark cheese
  • 1 Small egg
  • 1 tsp Salt
  • 250 g Wholegrain spelt flour
  • 15 g Baking powder
  • Milk
  • Sesame seeds
  1. Melt the coconut oil or butter in a saucepan. Remove from the heat, leave to cool to the room temperature. Beat Quark cheese, egg, salt and melted coconut in a mixing bowl until well blended.
  2. Combine spelt flour and baking powder. With a hand mixer, stir the flour mixture into the cheese mixture. Turn it out onto a floured work surface and knead for 3 minutes. Cover with a kitchen towel and leave it at room temperature for 10 minutes.
  3. Shape the dough into a roll and divide it into 9 even pieces. Form each piece of dough into a round ball and place on a parchment-lined baking tray.
  4. Using a sharp knife, slash tops of bread buns with a sharp knife. Brush with milk and sprinkle with some sesame seeds. Cover with a kitchen towel and leave it at room temperature for 10 minutes.
  5. Preheat the oven to 220C/410F with a baking tray filled with some water at the bottom rack. Place the bread in the center of hot oven. Reduce the oven temperature to 180C/350F and bake for about 25 minutes until golden brown.

@Veronica Ng Though I haven't tried it with cream cheese, I think it will work with any fresh soft cheese. However, the result can be different from the one made with Quark.

Could I possibly substitute fromage frais or even fromage blanc for the quark?...I live in France...Quark is available across the border in Switzerland...but I cannot seem to find it here in my corner of France! The images are perfection by-the-by!!

@DonnaI believe that you can use fromage blanc instead of Quark though the result might be slightly different, but I am sure they are equally delicious.

Wow Angie these look perfect. They're beautiful golden brown with the slash right in the center. Reading the recipe it does sound so easy. I would think Whole Foods would have spelt flour. These are on my list to make very soon. I wonder how these would be with my Thanksgiving dinner, and if my family would be mad if I didn't make my popovers! Thanks for sharing

Quark is one of my favourite cheese varieties too... soft, silky, high quality and not the processed plastic taste of commercial cream cheese :). Love these rolls - so perfect for a holiday table.
