Brussels Sprouts with Chestnuts and Pancetta


I know there are plenty of Brussels sprouts haters out there, but seriously this veggie deserves one more chance. Not to mention their fantastic health benefits, like cholesterol-lowering ability, anti-inflammatory support, cancer-protective substances, etc., they don't taste bad. Ok, I agree that they don't taste heavenly like chocolate, but they are great just like many other vegetables. Don't overcook them or they will smell stinky and taste bitter. It's better to serve them while they are still slightly crunchy.
Recipe adapted from BBC Good Food

  • 400 g Brussels sprouts, trimmed
  • 120 g Pancetta, diced
  • 200 g Cooked chestnuts, broken into large pieces
  • 1 tbsp Sugar
  • 200 ml Vegetable stock
  1. Bring a pot of water to a boil. Blanch the Brussels sprouts for 3 minutes until they are starting to soften slightly. Remove and drain.
  2. Heat a frying pan and fry the pancetta until crisp, then remove and set aside. Add the chestnuts and sugar, tossing in the pan, then pour in the vegetable stock and reduce by half.
  3. Add in Brussels sprouts and pancetta back to the pan. Stir to combine. Transfer to a plate and serve warm.

Just catching up on your last three posts, delish as usual! I love brussel sprouts, always have...used to think cheese complimented them, until I had pork products...leave the cheese for crackers and give me this dish!

This looks reallyyy good. I love brussel sprouts baked with a honey and mustard dressing type thing (not too sure what you call it and it's the only way I know to cook brussel sprouts). This sounds delicious! And gives me new ideas! :D

Are you kidding Angie?...I love brussel sprouts. It's a perfect winter dish, or for the holidays, with the chestnut, and of course the pancetta is yummy, any time with it. Such wonderful combinations of goodness!

This sounds SO good! I can totally imagine the flavors. Sadly it's difficult to find brussel sprouts at this time of year. When I lived in California where they are grown a funny little town would have a Brussel Sprout festival turning them into every edible item you could fathom. It think your recipe is much better than the Brussel Sprout ice cream I reluctantly sampled!

You know what! I used to hate brussel sprouts not until I accidentally order a dish that has brussel sprouts last Friday, I'm surprised how good it tasted. The chef told me that it is all about the way that it is prepared, overcooking it give a bitter taste.
