Keto Sandwich Loaf

Bread is probably by far the food many people miss the most when switching to a keto way of eataing, but there are great alternatives. You can try using finely ground blanched almond to make this sandwich loaf. (Check out this one that I baked with ground pumpkin seeds, chia and flaxseeds.) It seriously looks and tastes like a real thing, and still keeps you in ketosis. You can order psyllium powder (not the whole psyllium) at amazon. Try not to over mix the dough, or the bread will become gummy.

  • 300 g Blanched almond flour
  • 90 g Psyllium husk powder
  • 2 tsp Baking powder
  • 1 tsp Sea salt
  • 60 ml Organic apple cider vinegar
  • 190 g / 6 Egg whites
  • 350 ml Boiling water
  • 1/2 Egg yolk
  • 1 tsp Water
  1. Preheat the oven to 180C/350F. Line a 20cmx10cmx7cm loaf pan with baking paper or grease the loaf pan with some butter or olive oil. Set aside.
  2. In a mixing bowl, whisk together the almond flour, psyllium powder, baking powder and salt.
  3. Add in the egg whites and vinegar and mix until the ingredients come together. Now pour in the boiling water and mix until just combined and dough firms up.
  4. Turn out onto a clean work surface and shape into a loaf. Place the dough into the prepared loaf pan. Mix the egg yolk and water in a small bowl and brush the top of the dough.
  5. Bake for 65-75 minutes until it's crusty and golden brown. Remove from the oven and turn out onto a wire rack to cool completely before slicing.

Looks lovely und glufree too :) I just bought roasted almonds yesterday as they were on sale. I have never used Psyllium husks as they are extremely expensive here for some reason, but I have often seen them used in many glufree recipes.
