Vietnamese Lemongrass Chicken

The marinade, made with soya sauce, fish sauce, sambal, cilantro, lime and lemongrass, permeates the bone-in, skin-on chicken thighs to make them even more succulent, distinctive and delicious. If you want to use different cuts, make sure to adjust your cooking time accordingly. Serve them over rice, with pho or salad.

 
  • 60 ml Gluten free soya sauce
  • 60 ml Fish sauce
  • 1 tbsp Sambal oelek
  • 3 Garlic cloves, minced
  • 1-inch Ginger, grated
  • 2 tbsp Cilantro, finely hopped
  • 2 / 50 g Lemongrass, white part only and finely chopped
  • Juice of 1 lime
  • 1 tbsp Coconut sugar
  • 2 tbsp Olive oil
  • 4 Bone-in, skin-on chicken thighs
  • Lime and cilantro, to garnish
  1. In a medium bowl, whisk together soya sauce, fish sauce, sambal oelek, garlic, ginger, cilantro, lemongrass, lime juice, coconut sugar and olive oil. Or toss all of the marinade ingredients into a blender or food processor and process until combined.
  2. Place chicken thighs in a zipper lock bag or a bowl. Pour marinade and toss well, ensuring all the chicken coated with the marinade. Let chicken marinate for at least 4 hours or up to overnight.
  3. Preheat oven to 220C/430F. Line a baking tray with parchment paper and place a baking rack on top.  
  4. Remove chicken from the marinade and bake chicken thighs for 35-40 minutes until cooked through and golden brown and crispy. Reserve the marinade for later use. 
  5. Boil the reserved marinade in a small saucepan for 5 minutes. Transfer chicken to a serving platter and serve with the sauce, lime slices and cilantro. Enjoy!
