Raisin Muffins with Coconut Macaroon

Are you on team muffins or team cupcakes? Personally I prefer unfrosted muffins with a classic domed muffin top to cupcakes, which can be quite sugary sweet and unhealthy, though much more decorative and prettier. You can add nuts, seeds, fruits or other mix-ins to make muffins really interesting and less guilty. The batter of these muffins come together really quickly. However, I decided to make these muffins with creaming method, so the texture is much more airy and lighter, and add a coconut macaroon top, just for fun and extra chew. If you want to use muffin-method (combine the dry and wet ingredients separately, then combine them), you definitely can.

 
Muffin BatterCoconut Macaroon Topping
  • 90 g Butter, softened
  • 50 g Erythritol (or white sugar)
  • 1 package / 7 g Dr. Oetker vanilla sugar
  • 1 pinch Salt
  • 1 Medium egg
  • 1 Egg yolk
  • 60 g Sultanas
  • 100 g White spelt flour
  • 1 tsp Baking powder
  • 1 Egg white
  • 1 pinch Salt
  • 85 g Icing sugar
  • 100 g Desiccated coconut
  1. Preheat the oven to 180C/350F. Grease 8-9 muffin cases or egg tart moulds.
  2. Beat the butter, erythritol, vanilla sugar and salt until fluffy. Beat in the egg and egg yolk and continue beating until light and fluffy. Fold in the sultanas. Sift the flour and baking powder and stir into the mixture to form a batter.
  3. Divide the batter amont the muffin cases or egg tart moulds.
  4. Beat the egg white with salt until stiff. Gradually sift in the icing sugar and beat until everything is mixed. Fold in the desiccated coconut. Top each muffin with a tablespoonful of coconut macaroon.
  5. Bake the muffins in the centre of the oven for 20 minutes. Then bake in the top of the oven for a further 5-10 minutes until nicely browned. Remove and cool for 5 minutes before turning out on a wire rack.

What a fun idea adding the coconut macaroon to the top! I have always loved raisin muffins -- my aunt made ones with rosemary and golden raisins. These sound fantastic! David

That is a lovely combo of sultanas and cocosnus even though my fave combo is sultanas with rum. Rum is so neglected in today's world for some reason, there used to be more chocolates with it.
