Keto Salmon Balls

These nutritious keto salmon balls are naturally gluten free and perfect as an appetizer, main or salad topper! It’s easy to make and so versatile too. Change up the herbs, spices and serving sauce to suit your taste. You can even bake them at 180C/350F for 12-15 minutes if you dread of frying.

 
Salmon BallsGreen Goddess Dressing
  • 500 g Skinless salmon fillets
  • 20 g Dill, chopped
  • 35 g Pork rinds, ground or almond flour
  • 2 Egg yolks (or 1 small egg)
  • 2 Garlic cloves, minced
  • Zest of 1 organic lemon
  • 1 tsp lemon zest
  • Sea salt and black pepper, to taste
  • 2 tbsp Chicken schmaltz
  • Lemon wedges
  • 120 g Homemade mayonnaise
  • 80 g Full fat Greek yoghurt
  • 3 Anchovy fillets 
  • 20 g Fresh parsley leaves and tender stems
  • 10 g Fresh basil leaves
  • 10 g Fresh tarragon leaves 
  • 10 g Fresh mint leaves
  • 2 tbsp Lemon juice
  • Salt and pepper to taste
  1. Place all of the ingredients for the dressing in the bowl of a blender or food processor and blend until creamy. Store in the fridge while prepare the salmon balls.
  2. Use a sharp knife roughly chop the salmon fillets. I wouldn’t recommend using a kitchen processor to cut the salmon because it’s so easily to turn them into a paste. Place roughly chopped salmon in a large bowl. Add chopped dill, ground pork rinds, egg yolks, garlic, lemon zest, salt and pepper. Stir thoroughly until the ingredients are thoroughly combined.
  3. Shape the salmon mixture into 14-15 balls. Place them on a plate and chill for 30 minutes to set. Heat the chicken schmaltz in a large cast iron pan on medium-hight heat. Carefully add in the salmon balls and fry for 2-3 minutes each side until they’re golden crispy.
  4. Serve the salmon balls with prepared green goddess sauce and lemon wedges.

Very similar to salmon patties I grew up with. However, we just used canned salmon and saltines (in place of pork rind). We shaped into patties and lightly cooked on both sides.
