Easy, flavour-packed grilled salmon skewers with an Asian glaze with soya sauce, mirin, sake, ginger and xylitol (or sugar), are perfect for a light and refreshing summer meal. The salty, sweet, and umami-flavoured glaze contains only a handful of ingredients and also doubles as a sauce to pour over the top. They are naturally glutenfree, dairy free and low carbs. Serve them on a bed of beansprout salad or steamed rice or soba if carbs ain’t an issue for you.
| Wasabi Mayo |
- 3 tbsp Gluten free soya sauce
- 2 tbsp Mirin seasoning
- 1 tbsp Sake
- 1 tsp Xylitol or caster sugar
- 1 1/2 tsp Finely grated fresh ginger
- 3-4 Spring onions, white part cut into 2cm lengths and green part shredded
- 600-800 g Skinless salmon fillets, cut into 3cm chunks
- 200 g Beansprouts, trimmed
- Fresh parsley or coriander sprigs
- Black sesame seeds
- 2 tbsp Tallow or avocado oil
- Lime cheeks, to serve

- 150 g Homemade olive oil mayonnaise
- 1 tbsp Wasabi paste
- 1/2 Lime, juiced

- Place the soya sauce, mirin seasoning, sake, xylitol or sugar and ginger in a small bowl. Use a fork to whisk together until the xylitol has dissolved.
- To make the wasabi mayo, combine all the ingredients in a small serving bowl.
- Alternately thread salmon and spring onion onto 10-12 bamboo skewers.
- Arrange the beansprouts on a serving platter. Sprinkle with flat parsley or cilantro leaves, sesame seeds and shredded spring onions.
- Preheat a large non-stick frying pan with tallow over medium-high heat. Add half of the skewers to pan. Brush with some of the soy sauce mixture and cook for 30 seconds. Turn and brush with some of remaining soy mixture. Cook for a further 30 seconds or until cooked to your liking. Transfer skewers to the platter over the salad. Repeat with the remaining skewers.
- Pour the remaining soya sauce mixture into the pan. Simmer for 30 seconds. Drizzle the sauce over the skewers. Serve with the wasabi mayo and lime cheeks.

Seems like a really wonderful combination.
I do not think I would like wasabi as I don't like hot food, but I did make vegan potato mayo last week, you just mix boiled mashed potato with mustard and oil instead of eggs.

I always have salmon on hand, but it never occurred to me to cut it into cubes and make skewers. I love the idea of glazing it as well. Of course, your photos are always so beautiful and make everything look so delicious. Wasabi is a bit hot for me. As much as I would like to like it, I just can’t seem to.
