T-Bone Steak with Parmesan and Herb Dressing

Juicy steak is seared to perfection and Parmesan herb dressing adds a depth of flavour that's out of this world. Double the dressing as it’s great for salads, served with bread or tossed through the pasta. Serve the steak alongside some tender asparagus or a mound of mashed potatoes if you ain’t on low carb diet. With just a few quality ingredients, this dish is sure to become a family favorite. Do not use olive oil to cook steak, as its smoke point is lower than that of tallow or ghee and it will smoke before reaching the desired cooking temperature.

 
Parmesan Herb Dressing
  • 2x450-550g T-bone steaks
  • Tallow or ghee
  • Sea salt and freshly ground pepper
  • 250 g Tender green asparagus
  • 1 Organic lemon, zested and juiced
  • 4 tbsp Olive oil
  • 2 Garlic cloves, crushed
  • ½ tsp Chilli flakes
  • 2 tbsp Capers
  • 1 tbsp Chives, sliced
  • 2 tbsp Basil, chopped
  • 50 g Parmesan, diced 
  1. Whisk the lemon juice, oil, garlic and chilli flakes together in a bowl and season. Stir in the lemon zest, spring onion, capers and the herb of choice. Chop the Parmesan into small pieces about the same size as the capers and stir into the dressing.
  2. Season the steaks on all sides with the salt and pepper. Heat the tallow or ghee in a cast iron skillet over high heat until smoking. Sear the steaks for about a minute and a half to two minutes on each side, depending on the thickness of your steak for medium-rare to medium. If you would like your steak rarer or more well-done, cook your steak shorter or longer accordingly.
  3. Remove the steaks and set aside to rest for 5-10 minutes. In the same pan, cook the asparagus with salt and pepper until tender but still slightly crunchy. Remove from heat.
  4. Top each T-bone with a spoonful of dressing, serving the remaining sauce aside. Serve with the asparagus.

We usually barbecue our steaks, but using a skillet with ghee is a great for people who can't do that.
