This easy summer salad is simple yet packed with flavour. A great way to enjoy summer produce from the farmer markets. I kept the salad very simple with just greens and seasonal fruit, but you can throw in some coconut chips, macadamia nuts, cheese, and avocado if desired. Passionfruit vinaigrette, quick and easy to make, brings an unexpectedly sweet and tart twist to this simple salad.

  • 125 g Salad mix of your choice
  • 1 Starfruit, sliced
  • 150 g Currants (red, black or white)
  • 1 tbsp Fresh chives, sliced
  • Edible flowers, optional
  • Juice, pulp and seeds of 2 passionfruit
  • 1 tbsp White wine vinegar
  • 1 tbsp Lime juice
  • 3-4 tbsp Extra-virgin olive oil
  • 1 Small shallot, peeled and finely diced
  • Salt and black pepper
  1. Place all the ingredients for the dressing in a jar or a bowl. Close the jar and shake to combine.
  2. Arrange the salad mix in a large platter. Top with sliced star fruit, red currants and chives. Garnish with edible flowers if using. Drizzle with passionfruit vinaigrette. Gently toss together and enjoy!

Looks very pretty on the plate! Sadly, I have never had me either passion fruit nor star fruit. We do not have a lot of exotic fruit on offer here and even if we had they would be expensive as hell, methinks.

How many ways are there to make a salad? It seems there is no end!

Es una ensalada muy vistosa que se puede variar de ingredientes en función de los que nos gusten y tengamos en casa. Muy buena la vinagreta para aumentar su sabor.

I love the versatility of this recipe, allowing for personal touches like adding coconut chips, macadamia nuts, cheese, or avocado to customize it further. The passionfruit vinaigrette sounds like the star of the dish, adding a sweet and tart twist that complements the freshness of the salad ingredients beautifully.

The salad is so inviting with the edible flowers and fruit. I personally love the look of edible flowers but don't find they add much to the taste.
