During the summer months when it’s too hot to even think about cooking, this cold tahini cucumber soup comes to the rescue. Simply toss a handful of ingredients in a blender and, before you know it, you have something cool and refreshing yet surprisingly satisfying for the lunch! It's naturally gluten-free, dairy-free and keto-friendly.

- Place all the ingredients, except the crispy peas, along with salt and several grinds of black pepper, in a high-speed blender. Blitz until completely smooth, stopping to scrape down the sides of the blender, as needed. Taste and season with additional salt and pepper, as needed.
- Pour the gazpacho into a jug and transfer to a fridge to completely chill, at least 1 hour and up to 1 day. Taste again and season with additional salt and pepper, as needed, before serving.
- When you are ready to serve, divide the gazpacho among bowls and top with the crispy peas. Garnish with a few basil leaves and a drizzle of olive oil.
