Chunky Peach Guacamole

This chunky peach guacamole recipe, using ripe stone fruits instead of tomatoes, is quick and easy to make, it’s naturally gluten-free and low carb, and it’s always a hit with a crowd! Perfect as an appetizer, or for garden bbq or just everyday snacking!
Ripe juicy peaches add a sweet element to this chunky guacamole, making it even better for topping a taco or serving with crackers / chips in the summer. You can use other stone fruits instead of peaches. Add a few drops of Mexican hot sauce to jazz up the guacamole if desired.

 
  • 2 Ripe peaches, pitted and diced
  • 2 Ripe avocados, peeled, pitted, and diced
  • 1 Small red onion, finely chopped
  • 1 Small jalapeño pepper, deseeded and finely chopped
  • 2-3 tbsp Finely chopped cilantro
  • Juice of 1 lime
  • 1/2 tsp Salt
  • Cholula hot sauce, optional
  • Red lentil chips, to serve
  1. Add the peaches, avocados, red onion,jalapeño, cilantro, and lime juice to a large bowl. Sprinkle evenly with salt. Add a few drops of Cholula hot sauce if desired.
  2. Gently toss until combined. Taste and season with extra lime juice and salt if needed. Serve immediately.
  3. If you want to make this a couple of hours in advance, keep it in a sealed container at room temperature. Any longer than 2 to 3 hours and the avocados might get darker and peaches will start to break down.

I was wondering whether to take some peaches at the green grocers yesterday, but I opted for a melon in the end. We had a Lavander and Honey festival in my block this weekend, so I stocked on fresh new honey :)
