Cantaloupe Tomato Salad

Ripe, aromatic cantaloupe and heirloom cherry tomatoes are a perfect combination for this fresh, juicy and healthy salad, and it’s quick to put together too. Balling the cantaloup creates a more fun dish, but cutting them into bite-size chunks tastes just as delicious. Totally your choice. You could add more punch to this simple salad by adding some homemade croutons or feta or serve it with your favourite protein for a complete meal.

 
  • 1 Cantaloupe, balled
  • 300 g Cherry tomatoes, halved
  • 1 tbsp Dill, chopped (or mint, parsley and basil)
  • 2 tbsp Extra-virgin olive oil
  • 1 tbsp Lemon juice
  • Sea salt and freshly milled black pepper
  • Pink peppercorns
  1. Cut the cantaloupe in half and scoop out the seeds. Using a melon baller, press against the melon and scoop out the balls. Halve the cherry tomatoes.
  2. Place cantaloupe balls and tomoato halves in a large bowl. Add in chopped dill, olive oil, lemon juice, salt and pepper. Gently mix them together. Garnish with pink peppercorns and enjoy!

Looks so pretty. I'm just not sure it's for me. I ate too many cantaloupe when I was little and got sick and have never been able to eat it again.

I've had watermelon/tomato salad (kind of common here) but never cantaloupe. It is prettier and I imaging would be just as delicious.
