Strawberry Asparagus Salad

This delicious strawberry asparagus salad brings together favourite flavours of the season, with a nice tangy white wine dressing, toasted pine nuts, mint and Feta. All these ingredients get along beautifully and super healthy, packed with vitamins and essential nutrients, gluten free, keto and low in calories. White wine vinegar is more mellow and it's perfect for the delicate asparagus and strawberries.

 
White Wine Vinaigrette
  • 500 g White asparagus, trimmed and peeled
  • 2 tbsp Olive oil
  • 10 g Mint leaves, chopped
  • 50 g Pine nuts, toasted
  • 100 g Feta, crumbled
  • 400 g Strawberries, halved or quartered
  • 2 tbsp Olive oil
  • 1 tbsp Pinot white wine vinegar
  • 1/2 tsp Dijon mustard
  • Salt and pepper
  1. For the dressing, whisk all the ingredients together in a bowl.
  2. Peel the asparagus and cut off the woody ends. Bring a large pot of salted water to a boil, then add in the asparagus in the boiling water and cover the pot, leaving the asparagus to boil for about 10 minutes. Remove and drain.
  3. Heat the oil in a large skillet. Add in drained white asparagus and cook for about 5 minutes on one side over medium heat, then flip asparagus and cook for a further 5 minutes until tender.
  4. Meanwhile, wash the mint, pat dry and roughly chop. Toast the pine nuts in a pan without oil until golden brown.
  5. Wash and de-stem the strawberries and cut them into either halves or quarters. Place them in a large platter. Crumbled the Feta over. Top with white asparagus, then spoon some vinaigrette over. Garnish with the chopped mint leaves and toasted pine nuts.
