Frisée Salad With Warm Bacon Vinaigrette

This delicious, satisfying lettuce salad highlights frisée lettuce with soft-boiled eggs and croutons made with wild garlic soda bread. Pairing with a warm bacon vinaigrette, which works fabulously with pleasantly bitter, peppery curly endive leaves and runny yolks. Instead of croutons, you can use nuts, seeds or some roasted potatoes if you want to use up some leftover.

 
  • 4 Eggs, soft boiled
  • 2 slice Thick cut wild garlic soda bread, torn into bite-sized chunks
  • 2 tbsp Extra-virgin olive oil
  • 1 Large shallot, peeled and sliced
  • 125 g Diced bacon
  • 15 g Chives, sliced into 2cm batons
  • 1/2 head Frisée, roughly chopped
  • Sea salt
  • Freshly ground black pepper
  • 60 ml Red wine vinegar
  • 1 tbsp Honey
  1. Bring a pot of water to a boil. Gently lower the eggs into the water and cook for 6 minutes. Transfer to a colander, place under cold running water to stop the cooking.
  2. Meanwhile, tear the soda bread into bite-sized chunks. Heat the olive oil in a medium skillet over medium until shimmering. Add torn soda bread and stir well to evenly coat in oil. Reduce heat to medium-low and cook, stirring occasionally, until golden brown and crunchy. Transfer to a plate and let cool.
  3. Peel the shallot, then thinly slice crosswise. Slice the chives into 2cm batons. Thoroughly wash and dry frisée. Transfer to a large bowl.
  4. Heat the same skillet that you used to make crountons over medium. Add in diced bacon, stirring frequently, until just shy of crisp, 4–5 minutes. Add sliced shallots and season generously with freshly ground black pepper and continue to cook, stirring occasionally, until shallots are just softened, about 2 minutes.
  5. Remove skillet from heat and stir in red wine vinegar and honey, stirring to combine. Taste and season.
  6. Toss frisée, bacon vinaigrette, croutons, and chives to combine. Divide salad between plates or bowls and top with soft-boiled eggs.

Frisée Is mot very popular here and is therefore difficult to find. But this recipe looks like it’s worth the effort.

We don't have that kind of lettuce here, but I think this sounds very like our wilted lettuce, except you don't wilt the lettuce. I like your method much better.
