Infused with cinnamon, ginger, cardamom, and nutmeg, this spiced chai banana bread is moist and flavourful. The warming spices work really well together and are a good contrast with the sweetness of the banana. The white chocolate topping with extra banana chips and ginger makes it even more indulgent and irresistible, though entirely optional.

- Lightly oil a 22x10x7cm loaf pan and line with baking paper. Put the butter or olive oil into a small pan over a medium heat. Once hot, add the spices and tea leaves (removed from the tea bags) and cook for 1 minute to bloom the spices. Remove and set aside.
- Whisk together the flour, baking powder and salt in a medium bowl. Add the diced ginger and toss to combine. In a large bowl, mash the bananas with a fork then whisk in the crème fraîche, sugar, eggs, vanilla and chai-butter mixture, whisking until smooth. Add the dry ingredients to the wet and use a spatula to mix until just combined.
- Pour the batter into the prepared loaf pan and gently level out. Bake for 55 minutes or until a skewer inserted into the cake comes out clean. Cool until just-warm in the tin, then lift out and onto a plate.
- To decorate, if you like, drizzle over the melted chocolate and top with the banana chips and crystallised ginger.

Looks gorgeous and delicious. I would eat anything with bananas, my fave fruit. I especially like the addition of black tea in it, love adding tea to cakes. Or loved while I still baked with sugar. I had Earl Gray shortbread recipe and some torte recipes with camomile and elder-flower tea. I am sipping my Pickwick green tea with cranberry with added honey and lemon while typing this :)
What an extremely clever combination of chai and banana in a quick bread, the flavours must compliment each other very well. The dousing of icing certainly doesn’t hurt!
