Minted Lamb and Feta Meatballs with Tomato Salad

These lamb and feta meatballs are deliciously spiced with mint and garlic. They are succulent, juicy and loaded with flavour served with a colourful cherry tomato salad over a bed of homemade hummus. They are naturally gluten free, low carb and perfect comfort food for the whole family to enjoy.

 
  1. Combine lamb mince, feta, dried mint and garlic in a bowl, season and roll heaped tablespoonfuls into balls. Place on a tray, cover and chill for 30 minutes to firm up.
  2. Meanwhile, place cherry tomatoes, red onion, fresh mint, balsamic vinegar and half the olive oil in a bowl, season and toss to combine. Set aside.
  3. Heat remaining oil in a non-stick skillet over medium heat. Add meatballs and fry, turning often, for 5-7 minutes or until browned and cooked through.
  4. Spread hummus on a plate, top with tomato salad, meatballs and extra mint leaves.

I do not like their taste, but I do love mint leaves used in decor for food, very pretty always. I will be making corn flour roulade filled with mayo, grated cheese and sunflower salamy for New Years Eve!
