An indulgent but easy and speedy steak dinner featuring succulent steak, earthy, meaty chanterelles and mellow onion. Stir-fry cooks up pretty quickly so have all the ingredients prepared and ready before you turn on the heat. I used chuck steak, but ribeye, flank steak or even fillet all work well. Serve them with egg noodles or steamed rice.
| | |
- 400-500 g Chuck steak (ribeye or flank), thinly sliced
- Sea salt and freshly milled black pepper
- 250-300 g Chanterells, larger ones sliced or torn
- Ghee, tallow or chicken schmaltz
- 1 Large red onion, halved and sliced
- 1 tsp Rosemary, finely chopped
- 1 tbsp Dry Sherry or brandy
- 2 tbsp White balsamic
- 1 tbsp Fresh chopped parsley, to garnish
|
- Slice beef into thin strips and season with salt and pepper. Clean the chanterelles and cut or tear the larger ones.
- Heat 2 tablespoons of tallow in a large skillet over medium-high heat. Working in batches, brown the beef for about 2 minutes, stirring frequently. Be careful not to overcook the beef. Transfer to a bowl with a slotted spoon.
- Add another tablespoon of tallow to the same skillet. Add in sliced red onions and cook for a few minutes. Add in chanterelles and cook for about 5 minutes, stirring frequently, sprinkling in chopped rosemary about halfway through. Deglaze pan with sherry or brandy and white balsamic,
- Return beef and cook together for a couple of minutes. Taste and adjust seasonings. Sprinkle with parsley and serve immediately.

Looks so good
Shrooms are the queens of Autumn
This would hit the spot!
This looks delicious and even though it's still morning, you've got me ready for dinner. Hope you're having a super day.
Este será uno de mis platos preferidos, los rebozuelos me encantan y aunque no soy de mucha carne, cocinada de esta forma no me importará comerla.
That beef looks so tender and delicious!
What a delicious combination! Chanterelles are in season here. Yum.
Looks delicious Angie! Take care, enjoy your day and the weekend ahead.
That looks really good.
This looks delicious, Angie! I'm a little jealous of those beautiful chanterelles – they're so hard to find here! :)
It looks delicious, Angie!!!
Gracias por la receta. Te mando un beso.
I do like good mushrooms. This looks very good.
hubby and I seem to be mostly vegetarian these days (just like our youth) but i don't mind a bit of beef once or twice a year! I bet this is delish!
sherry
I do like chanterelle
Looks great and I think it would taste great too, Angie.
Angie, those mushrooms on top of the beef look really good. This would be something that my husband would love.
I think I would eat this just like you've served it here.
I must admit, I did not know what chanterelles were. They sound tasty.
White balsamic with sherry to deglaze is a combination I wouldn’t have thought of for beef and mushrooms. Only two minutes for the beef so it stays tender, that’s a good tip for a stir-fry. And you always have such beautiful, appetizing photos, Angie.
I love steak and this looks so delicious. Love the quotes as well. Happy Friday Angie!!
It looks delicious indeed. Eat you bread, potatoes or Rice with this? My husband needs always a sauce too having meal.
Greetings by Heidrun
Gorgeous! This is autumn on a plate. Chanterelle mushrooms are my favorites mushroom with the possible exception of porcini.

This recipe not only looks delicIous but can be made so quickly. It's a real time saver, the only drawback is t's not always easy to find Chanterelle mushrooms :(
