Tender, flavour-packed chicken wings drenched in a fresh and mildly spicy herb sauce with a perfect balance of heat, acid, and freshness, creating that addictive, "moreish" quality that will have your taste buds dancing and keep you coming back for another bite. I have used only mild jalapeño for the sauce, if you love hot wings, then use significantly spicier habanero or a mix of two peppers instead. The sauce can be prepared a few hours ahead.

Spicy Herb Sauce
  • 10-12 Chicken wings without tips
  • 2 tbsp Chicken schmaltz, melted or olive oil
  • ½ tsp Smoked paprika
  • Sea salt
  • Freshly milled black pepper
  • 15-20 g Carrot tops (or parsley), chopped
  • 10 g Chives, chopped
  • 10 g Basil, chopped
  • 1-2 Jalapeño, seeded and chopped
  • 2 tbsp Apple cider vinegar
  • 1 tbsp Xylitol or honey
  • 1 tsp Finely minced, peeled fresh ginger
  • 2 Garlic cloves, crushed
  • ½ tsp Finely chopped rosemary (or thyme)
  • 1 tsp Finely grated orange zest
  • Pinch of freshly grated nutmeg
  • 3 tbsp Olive oil
  1. Preheat the oven to 230C/450F. In a large bowl, toss the chicken wings with 2 tablespoons of chicken schmaltz or olive oil and season them with paprika, salt and pepper. Transfer the wings to a large baking tray and roast for about 40-50 minutes, until cooked through and crisp.
  2. Meanwhile, in a food processor or blender, combine all of the remaining ingredients and process until nearly smooth. Season the green sauce with salt and pepper and transfer to a large bowl.
  3. Add the crispy wings to the green sauce and toss well. Transfer to a platter and serve hot.

Esas alitas están diciendo "cómeme" y lo haría de buena gana. Muy rico el aliño, si no pica demasiado le dejo el jalapeño porque el conjunto es de lo más atractivo.

I like it when you use plates in brown colour, for some reason it is such a lovely colour in kitchen.

Angie, around here we aren’t used to eating spicy food. I find it interesting that you used carrot tops as a seasoning.
Otherwise, that chicken must be very fragrant and flavorful.
Best wishes
