A superfood-packed power bar, adapted from Donna Hay, these no-bake quinoa and blueberry power bars are naturally gluten-free, refined-sugar free and perfect for on-the-go. I used Davert organic 100% almond butter (no added sugar or sweeteners) for the recipes because it contains heart-healthy monounsaturated fats as well as vitamins and minerals. Feel free to use natural peanut butter instead. Use regular dried blueberries if you don't have accesse to freeze-dried one. These bars can be stored in an airtight container in the refrigerator for up to two weeks.
Quinoa and Blueberry Power Bars

- Line a lightly greased 20cm x 30cm slice tin with baking paper and set aside. Place the xylitol, almond butter, water and vanilla in a small saucepan over low heat and cook, stirring, for 5-6 minutes or until the xylitol has dissolved.
- Place the quinoa, oats, coconut, chia, cinnamon and blueberries in a large bowl and mix to combine. Add the hot almond butter mixture and mix well to combine. Press the mixture into the prepared tin and refrigerate for 1 hour or until set. Cut into squares and serve.

Very pretty and healthy. We don't have any of those ingredients here, sadly. It is very difficult to find here bars and granolas without wheat in them. I always have to stock on glufree bars in Lidl, but they price them quite high.

Had in mind dried berries quinoa crisps that I was going to make/bake, so your power bars are really motivating me to get started. Recently made some thin crisps (they call it florentine crisps) with nuts and seeds and they were very addictive. I bet these bars are addictive too!
