Marzipan Mousse with Cinnamon Cherries

Impress your family and friends at your next dinner party with this rich, creamy yet light marzipan mousse with cinnamon cherries. Some mousse recipes use egg whites, but I much prefer to use only egg yolks for a richer flavour. If fresh cherries ain't in season, use frozen one.

 
MousseCinnamon Cherry Topping
  • 3 Gelatine sheets
  • 200 g Heavy cream
  • 250 ml Milk
  • 100 g Marzipan, cut into small pieces
  • 2 Egg yolks, medium
  • 90 g Xylitol (or regular sugar)
  • 1/2 tsp Pure vanilla powder
  • 500 g Fresh cherries, pitted (or use 300 g frozen cherries)
  • 50 g Xylitol (or regular sugar)
  • 1 pinch of cinnamon
  • 2 tsp Cornstarch
  • 3 tsp Water
  • Toasted almond flakes, to garnish (optional)
  • Fresh mint, to garnish (optional)
  1. For the mousse, soak the gelatine in cold water for several minutes according to the packet instructions. Whip the cream to soft peaks. Chill until ready to use.
  2. Pour the milk into a small pan and bring to the boil over a medium heat. Add the marzipan pieces and allow to dissolve. Remove the marzipan milk from the heat and leave to cool.
  3. In the meantime, place the egg yolks, xylitol and vanilla powder in a bowl and mix together.
  4. Warm the egg yolk mixture over a bain-marie until it reaches 80C/175F, stirring constantly. Squeeze out the gelatine well and dissolve in the egg yolk mixture. Add the marzipan milk and finally fold in the whipped cream. Pour the mousse into 5-6 dessert glasses. Chill the marzipan mousse for at least 2 hours to set.
  5. For the cinnamon cherries, place the cherries in a small pan, add the sugar and cinnamon and bring everything to a boil for about 4 minutes on a medium heat.
  6. Stir the cornstarch and water until smooth and stir into the hot cherries. Leave to cool slightly after boiling. Serve the chilled mousse with the lukewarm cherry sauce. Garnish with almond flakes or mint leaves if using.
