Lupin (aka lupine or lupini) are a legume enjoyed in the Mediterranean region and they’re also very well known in Middle Eastern countries like Jordan and Egypt. They are high in protein, fibre, potassium, magnesium and many other minerals and vitamins. Around the same size as fava beans, these yellow legumes have a sweet, nutty flavor and firm, hearty texture. They are a nutritional powerhouse with nearly double the amount of protein that's in chickpeas.

- In a mason jar, add olive oil, apple cider vinegar, freshly squeezed lemon juice, minced garlic, sea salt and black pepper. Screw the lid and shake the jar vigorously to mix the ingredients.
- Remove the shells of lupin beans if you don't like the chewiness of thick skin. Simply squeeze the bean between your thumb and index finger into a bowl, the skin should come right off with a little force.
- In a large salad bowl, add drained lupini beans, red onions, sliced tomatoes, and chopped parsley. Sprinkle the salad with sumac and drizzle with the prepared dressing. Toss gently to combine. Transfer them in a large platter and top with eggs and black olives.

I've seen Lupin flour at the Co-Op awhile ago and the price was crazy high. The bean itself though, I'd buy that to try for sure. LOVE stuff like this. So fun to play.

I have never seen or heard of Lupin Beans before, however I shall definitely have them on my radar in time for summer salad season.
A salad isn't a salad without hard boiled eggs that's for sure, so I was pleased that you included them in this dish, although I generally prefer mine a little firmer with none runny yolks. Hard boiled is just about the only way I will eat eggs and then I really enjoy them for some strange reason!

Your images came first, before I started reading and saw what it look like fava beans (love fava beans by the way) except they are yellowish. And there we are, you mentioned fava beans in your post! Next time I see lupine around, am gonna try it.
